Raw Chocolate & Nut Energy Bites

Raw Chocolate & Nut Energy Bites I've recently cut out a few things from my diet including added sugar, gluten, processed foods and caffeinated drinks to try and heal my gut and reduce my anxiety levels. There are 2 things I'm really REALLY missing so far - tea and chocolate!  Over the years I have developed the habit of drinking way too much black tea. I could easily drink 7 cups a day, especially when I'm home and/or in the evenings, which as you can imagine it the worst time to be drinking caffeine! Raspberry Almond Porridge

Nut butters can be such a life saver in the morning. They're a great go-to option, especially on those days when you need something quick or can't be bothered thinking of something to make but still want to eat something healthy. They're a great source of vitamins, minerals, healthy fats and protein to start your day off right. They're also a great addition to porridge.

Healthy Oat Waffles (Gluten-free)

What's so special about waffles? I never really saw what all the fuss was about, until now! Since hubby was given a waffle maker for his birthday, I tried it for the first time and fell in love! Pancake weekends are now referred to as waffle weekends! Don't get me wrong, I will always love my pancakes. The thing about waffles, and it's something that you can never get with pancakes, is their crispiness.

Baked Tamari & Maple Tofu with Rice Noodles

I've been eating quite a lot of tofu and I'm really enjoying experimenting with it at the moment. Since I've decided to start cutting back on my meat consumption and to stop cooking it at home, tofu has become a life saver! It's an amazing vegetarian/vegan source of protein and it's quite easy to cook once you know what you're doing.
