Healthier Vegan Baklava Cups

Mini cups filled with crunchy nuts - these healthier vegan baklava cups are the perfect light sweet treat! Baklava is probably the one dessert you’ll find served at every celebration in the Middle East or any Arab speaking country. It’s such a decadent dessert - one that is served to show hospitality & generosity. Diamond shaped delights made up of layered crispy phyllo pastry, crunchy nuts flavoured with cinnamon & cardamom all drenched in a rose water + orange blossom infused syrup. Baklava is also the go-to dessert during the holy month of Ramadan as well as during Eid celebrations. They’re usually so hearty/sweet that I can only manage a couple of bites or a really small piece, otherwise it sits heavy [...]

Protein Fruit & Seed Bars

A hearty snack bar - these protein fruit & seed bars also make a great on-the-go breakfast on busy mornings. Packed with seeds & dried fruit all topped off with a decadent layer of smooth dark chocolate!  I use nuts and nut butters in a lot of my desserts, baking and snack recipes. Every time I post a recipe I can guarantee I'll get at least one person asking for a nut-free alternative. Nuts can easily be replaced with seeds and nut butters with tahini or sunflower seed butter.  I thought it was about time I created a recipe that's completely nut-free, but still packed with healthy fats & fibre. I also added in some protein powder to make it [...]

5-Ingredient Vegan Gingerbread Fudge

A simple no-bake and no-cook fudge made using healthier ingredients. These 5-ingredient vegan gingerbread fudge make for a lovely lighter treat to enjoy during the festive season, but also make a wonderful edible gift idea!    I made these chocolate dipped fudge squares last Christmas to take with me when I visited family members. I used one of my favourite ever recipes, this simple fudge recipe, but I gave it a festive twist by adding cinnamon, ginger and allspice.  They're perfect if you need a quick and easy treat to gift to loved ones or a lighter dessert to enjoy on the big day.  I know this is not your typical fudge recipe and I have had people asking why [...]

Ferrero Rocher Stuffed Dates

A healthier treat to enjoy over the festive period. These Ferrero Rocher stuffed dates are so easy to make and only call for a handful of ingredients! I've been making stuffed Medjool dates for years, ever since I embarked on my healthy eating journey. It's such an easy dessert and tastes absolutely divine! A great way to satisfy my sweet tooth, but with better-for-me ingredients.  I know they don't taste exactly like a Ferrero Rocher, but I'd say they're not far off. The fudge like sweetness of the dates along with the hazelnut butter and dark chocolate coating make the perfect healthier substitute. To make them a little more indulgent, I dipped them in dark chocolate with chopped hazelnuts to [...]

Middle Eastern Chickpea Aubergine Flatbreads

These Middle Eastern chickpea aubergine flatbreads are prefect for a healthier 'fakeaway'. They taste amazing, packed with flavour and are so easy to make! I grew up eating something called 'Lahm Bi Ajeen', which literally translates to 'meat in dough'. It consisted of a basic flatbread dough, topped with a tomato minced meat mixture. Like a Middle Eastern pizza, if you will, flavoured with Middle Eastern spices.  I've been making a vegan/vegetarian version for years, the toppings of which vary depending on my mood and what I had available at the time. However, chickpeas and aubergine are probably my favourite toppings for this recipe, so that's exactly what I'm using today. A Middle Eastern and Indian flavour fusion - I'm [...]

Blueberry Soft Baked Bars

A soft oaty bake filled with blueberry yumminess! These blueberry soft baked bars make a great on-the-go breakfast or handy snack. They taste like a treat, but are much better for you than your average shop bought snack bars. When I first moved to the UK, one of the things I absolutely loved eating for breakfast were breakfast bars, specifically the soft baked kind with the fruity fillings. I loved the softness of the outer case and the sweetness of the jammy tasting filling. I hadn't had one of those bars in years, but was recently reminded of them when I was scanning the supermarket snack isle. I had this overwhelming urge to recreate something similar, but with a healthier [...]

These Walnut cranberry & white chocolate biscotti make a lovely lighter treat to enjoy during the festive period. *This post is sponsored by California Walnuts* For me, biscuits and cookies are the king of desserts. Vegan Chocolate Banana Bread

Who could say no to a lush slice of vegan chocolate banana bread? Not me! Banana bread is delicious as is, but add chocolate into the mix and you'll end up with something truly irresistible 😍 Banana bread is probably one of my favourite types of cake. I've made a few of banana bread recipes in the past, like my  walnut banana bread, banana blueberry bread and this banana avocado bread. I can see myself making many more variations in the future too :D I just love how dense and moist they are. You really can't go wrong with a good banana bread. It's such a crowd-pleaser! Treat yourself or make it the next time you want to impress someone with your [...]
