These 5-ingredient no-bake pistachio brownies are so moreish, require no baking and are packed with nutrients! Perfect if you’re looking for a super easy and yummy dessert.
Why I love making these 5-ingredient no-bake pistachio brownies:
No-bake desserts are my favourite type of treats to make. They’re so easy, call for few ingredients and taste so good! What I also love about them is that you can adjust the taste and texture as you go along rather than having to wait for something to bake before you know whether it’s worked or not.
I’ve made a couple of different variations of these brownies over the years, based on one of my most popular blog recipes so far – these 5-ingredient no-bake chocolate covered brownies. I knew they would be popular even before I posted them. They’re easy, you only need a handful of ingredients to put them together and they actually taste amazing! I’ve found that healthy brownie recipe out there always fall short in some way. They either ‘taste healthy’, have the wrong texture or ask for too many ingredients. My version is decadent (from using healthy fats in the form of the nut butter), easy to make (you literally blend everything together, then freeze!), and packed with nutrients (from the dates, nut butter and dark chocolate).
I also made a peanut butter version, which you can find here, but I’m taking the recipe to the next level by using my all time favourite nut butter – pistachio butter! You can of course use any nut butter you prefer, hazelnut or almond butter would also work perfectly with the flavour of the dates and chocolate.
What makes these 5-ingredient no-bake pistachio brownies good for you?
I’m using dates as the base for my brownies. They add lots of natural sweetness, without being overly sweet. They’re also a good source of various vitamins and minerals, including potassium, magnesium, copper, manganese, vitamin B6, and niacin (vitamin B3). They’re high in contain fibre, which is important for digestive health.
Each serving of these 5-ingredient no-bake pistachio brownies offers 7g fibre and 7g protein! Not bad for a decadent dessert. they’re also packed with antioxidants from the cocoa, dark chocolate, dates AND pistachio butter.
I decided to make them even healthier by adding greens powder into the pistachio centre. Greens powders are an easy way to make sure I’m getting a variety of different fruits, vegetables and all the different antioxidants that come with it.
There’s absolutely nothing wrong with eating a regular brownie from time to time, I do it too, but if you’re looking for a healthier way to satisfy your chocolate cravings without overindulging, these brownies are a great option. They’re also great for anyone who can’t eat things like dairy, eggs and gluten.
What you need to make these 5-ingredient no-bake pistachio brownies:
Dates – As well as being high in fibre and antioxidants, dates are a great source of natural energy due to their carbohydrate content, particularly simple sugars like glucose and fructose. They can provide a quick energy boost when needed, making these brownies a great mid-afternoon snack when your body is craving some energy.
Pistachio butter – Pistachio butter is packed with essential nutrients, including protein, healthy fats (such as monounsaturated and polyunsaturated fats), fibre, vitamins (such as vitamin B6, thiamine, and vitamin K), and minerals (such as potassium, phosphorus, and magnesium). It’s by far my favourite nut butter. It tastes amazing and I love the pop of green it adds to treats. You can of course use any nut butter you prefer if you don’t like pistachios or find it difficult to get hold of.
Cocoa powder – I use quite a bit to make these brownies decadent, rich and super chocolaty. It’s one of the richest sources of antioxidants, particularly flavonoids like catechins and procyanidins. Cocoa powder is also a good source of essential minerals such as iron, magnesium, potassium, and zinc
Greens powder – Not that these brownies needed any added nutrients, but I decided to pack in more antioxidants in the form of a green powder. It’s such an easy way to add extra goodness in without noticing. I used Bloom greens powder in the mango flavour. It actually adds extra sweetness, so I didn’t feel the need to add any sweetener to the pistachio layer.
Dark chocolate – Like cocoa, dark chocolate is a great source of antioxidants called Flavanols. Dark chocolate is also a good source of soluble fibre, vitamins, and minerals.
How to make these 5-ingredient no-bake pistachio brownies:

Add the dates to a food processor along with the pistachio butter and blend until you have an even mixture.

Add the cocoa powder and salt and blend again to combine.

Press the mixture into a cake tin lined with baking paper – I used a 22×12 cm loaf tin.

Mix the pistachio butter and greens powder in a bowl, then smooth over the brownies.

Freeze for a couple of hours or until the pistachio butter is solid, then remove and pour the melted chocolate on top.

Allow the chocolate to set for a few minutes, it’ll harden quite quickly since the pistachio butter is frozen.

As soon as the chocolate has set, slice into 10 squares and enjoy!

Store in an air-tight container at room temperature or in the fridge for up to 5 days.

For the brownies
- 220g Medjool Dates
- 150g pistachio butter
- 40g cocoa powder
- Pinch of salt
For the pistachio layer
- 100g pistachio butter
- 2 scoops Bloom greens powder
For the topping
- 100g dark chocolate melted
Instructions
- Add the dates to a food processor along with the pistachio butter and blend until you have an even mixture.
- Add the cocoa powder and salt and blend again to combine.
- Press the mixture into a cake tin lined with baking paper – I used a 22×12 cm loaf tin.
