I’m always making quinoa, but I rarely make it plain. I always add things like beans, nuts and lot of vegetables. It’s so easy and quick to make so it’s perfect for when you’re in a hurry and need something quick. I like to make a huge batch and store it in the fridge to have for lunch throughout the week. It makes an amazing lunch on the go – better than your average sandwich and definitely much healthier, and more interesting (in my opinion!).

Frozen blueberry bowls

Last week was actually warm enough for a frozen treat, looks like summer is finally here (even though it’s raining now as I’m writing this!!) On most evening, I like making quick and simple recipes, like these healthy tuna patties. All you need to do is chop a few ingredients, mix everything in one bowl, shape into patties and shallow fry for a few minutes and you’ll have a tasty and satisfying meal. You can eat these tuna patties on their own with a side salad and sweet potato fried, or you can turn it into a burger with layers of tomato, lettuce, a slice of cheese and a drizzle of Sriracha…perfect!
