Gluten Free Vegetarian Spaghetti

As some of you already know, I like keeping my recipes simple. To make this gluten free vegetarian spaghetti I'm making a simple tomato sauce using canned tomatoes and tomato puree and flavouring it with garlic, basil, chilli flakes and lemon jucie. I'm adding peas for some extra colour and texture but feel free to use minced meat or prawns for some protein.

Strawberry Chocolate Chip Vegan Pancakes

As an IBS sufferer I really have to be careful what I eat, particularly for breakfast. Usually if I start the day off wrong, my digestive system will play up the rest of the day no matter what I do. I would get this heavy unsettling feeling in my stomach, like a brick. It feels like the food sits there for hours and I start feeling so tired, sluggish and lethargic. Pancakes were one of those foods that I had to avoid in the morning!

Healthy Chocolate Banana Smoothie

This smoothie tastes so so good, kind of like a chocolate milkshake! But all the ingredients will nourish and feed your body. The healthy carbs (from the banana) and protein (from the added protein powder) make it an excellent breakfast or post-workout meal.

Vegan Burger Recipe

I love vegetable and bean burgers. They may not taste like meat but they can be just as satisfying without leaving you feeling heavy and sluggish from the high fat and oil content. To me, normal meat burgers are a treat - one that I would only probably have once or twice a year if even that. These vegan burgers however, I would happily eat everyday!

Healthy Linzer Cookies (Gluten-free, Dairy-free, Vegan)

Two raw, soft and sweet heart shaped cookies with a layer of tangy raspberry chia jam sandwiched in between them - The perfect healthy sweet treat to make for that special someone whether it's for valentine's day, an anniversary, or just as cute gesture of love and appreciation.

Healthy Smooth Guacamole (Avocado Dip)

Guacamole goes with everything: salads, vegetables, meat, in sandwiches...I make so many different variations all the time depending on what ingredients I have, but mostly how lazy I'm feeling! Usually, I'll scoop a ripe avocado onto a plate, mash it with a fork, add lots of fresh lemon juice and a sprinkle of pepper and call it 'Guacamole'. It tastes so good and fresh simply like that, but if you're having Mexican food (say Fajitas!) then you have to do it properly.

Healthy Rhubarb Crumble Bars

I must admit I’m not the biggest fan of fruit pies, or cooked fruit desserts. I prefer eating my fruit raw and cold; however, rhubarb is one of those fruit (a vegetable, actually!) that you can’t eat any other way apart from cooked…so I thought why not give it a try. It’s so deliciously tart and not too sweet. In fact, I only used 2 tbsp sweetener in the filling and it was just right! Traditional recipes use anywhere between ½ and 1 cup of sugar for the filling alone!
