Banana Peanut Butter Overnight Oats (Video)

If you've been following me for a while you will know how much I absolutely love overnight oats! It's definitely my go-to breakfast recipe especially if I know I'm going to be in a rush in the morning and won't have much time to prepare breakfast. There are so many fun ways to change it around so that each morning you have a completely different tasting breakfast!

Avocado Tomato Bruschetta

I know I'm not alone when I say this - I'm obsessed with avocados! Another thing that I love is bruschetta - the crispy bread it's served on, the flavours and the simplicity of the idea! I've made simple tomato and basil bruschetta many times, then one day it occurred to me, why not add avocado? It made perfect sense.

Chocolate, Almond and Baobab Nicecream

Banana ice cream is by far the best, tastiest and healthiest way to cool down on a hot summer's day, in my opinion. It's so quick to make, given that you have bananas in your freezer which I make sure I always do during summer in anticipation for such scorching days, and it's so creamy and delicious without any guilt whatsoever!

Vegan Avocado Banana Bread

I absolutely adore this recipe! This bread is so moist, sweet and really good for you! Baking is my passion, I can easily live on baked goods (breads, cakes, cookies...you name it!), but they have to be healthy, of course! Otherwise the guilt would totally take over, not to mention the bloating and mood swings that follow eating sugary, fatty goods!

Banana, Date & Almond Buckwheat Porridge

If you're familiar with the concept of overnight oats, buckwheat porridge is similar but with a slight twist. Buckwheat is one of those ingredients that not may people are familiar with, outside the health community of course! You can now easily get hold of buckwheat as it's available in most supermarkets and online. I've also noticed more and more brands adding it to their granola, muesli and snack bars.

Mixed Berry Chia Pudding

This recipe is as easy as they get! You literally only need 3 main ingredients and then you can add whatever else you like. Chia seeds have very quickly become one of my pantry staples that I can't live without! I've been using them particularly in baking as a substitute for eggs, especially when I'm looking for something denser and less spongy. I think chia eggs work so much better than flax eggs, does anyone else think that?

Strawberry Chocolate Chip Vegan Pancakes

As an IBS sufferer I really have to be careful what I eat, particularly for breakfast. Usually if I start the day off wrong, my digestive system will play up the rest of the day no matter what I do. I would get this heavy unsettling feeling in my stomach, like a brick. It feels like the food sits there for hours and I start feeling so tired, sluggish and lethargic. Pancakes were one of those foods that I had to avoid in the morning!
