Quick Prawn Coconut Curry

This quick prawn coconut curry has been a dinner staple in my household for years. Whenever I'm stuck for meal ideas or want something quick and easy, I always come back to it. This is my version of a 'curry in a hurry' - It will only take 30 minutes for a lovely, warming curry that's full of flavour. Why I love making this quick prawn coconut curry: The secret lies in balance. Every element plays a role, creating layers of flavour that feel complex despite the short cooking time. Prawns cook quickly but carry a natural sweetness and delicate briny flavour that pairs beautifully with coconut milk. The richness of coconut softens heat and spice, creating a silky base [...]

Healthy Linzer Cookies (Gluten-free, Dairy-free, Vegan)

Two raw, soft and sweet heart shaped cookies with a layer of tangy raspberry chia jam sandwiched in between them - The perfect healthy sweet treat to make for that special someone whether it's for valentine's day, an anniversary, or just as cute gesture of love and appreciation.

Healthy Smooth Guacamole (Avocado Dip)

Guacamole goes with everything: salads, vegetables, meat, in sandwiches...I make so many different variations all the time depending on what ingredients I have, but mostly how lazy I'm feeling! Usually, I'll scoop a ripe avocado onto a plate, mash it with a fork, add lots of fresh lemon juice and a sprinkle of pepper and call it 'Guacamole'. It tastes so good and fresh simply like that, but if you're having Mexican food (say Fajitas!) then you have to do it properly.

Healthy Peanut Butter Cookies (Dairy-free, Gluten-free)

I've been on a massive peanut butter kick the last few days when usually I'm more of a Tahini girl. I go through these phases where I crave a specific food and want to eat it everyday and right now, peanut butter is that food! I've been eating it straight out of the jar with a spoon.

Almond Cranberry and Pistachio Cookies I hope you've all had a relaxing holiday. Did you indulge in some yummy food and treats? I was planning on doing just that but my tummy has been awfully sensitive the last few weeks so I'm having to take it easy, a very difficult thing to at best times when you're a food blogger let alone around Christmas time! Baking is my therapy and helps me de-stress so even when I'm not feeling well, I bake! I wasn't sure what to bake but I knew I wanted to use ground almonds since I had a few bags on hand in my pantry. So I decided to make some flour-less, grain-free and gluten-free cookies. The [...]

Roasted Brussels Sprouts with Cranberries and Pecans

I feel that Brussels sprouts are neglected all year round apart from Christmas. I can only find them locally around this time and it makes me sad, because I LOVE BRUSSELS SPROUTS! I realise not everyone shares my passion for the humble sprout and I guess I can understand why. I always used to boil or steam my Brussels sprouts which I must admit did get boring after a while. That's before I discovered roasting them instead!

Healthy Rhubarb Crumble Bars

I must admit I’m not the biggest fan of fruit pies, or cooked fruit desserts. I prefer eating my fruit raw and cold; however, rhubarb is one of those fruit (a vegetable, actually!) that you can’t eat any other way apart from cooked…so I thought why not give it a try. It’s so deliciously tart and not too sweet. In fact, I only used 2 tbsp sweetener in the filling and it was just right! Traditional recipes use anywhere between ½ and 1 cup of sugar for the filling alone!
