Chickpea Avocado Sandwich

Chickpea Avocado Sandwich A delicious and satisfying sandwich that's a perfect speedy lunch idea for Veganuary. I seem to see a lot of controversy concerning Veganuary this year, but I honestly don't see why some aren't happy that people are trying it out, even if it is only one month of the year. If you haven't heard of Veganuray, it's quite a newish 'trend' that's going around on social media. Not sure who started it and when, but it's my understanding that the idea behind it was to encourage people who aren't vegan to try eating a vegan diet for a month, whether they believe in the ethics behind veganism or not.  This year in particular, it seems that more and more [...]

Blueberry Protein Buckwheat Pudding

Blueberry Protein Buckwheat Pudding I keep going through phases when it comes to what breakfast I crave in the morning. Sometimes I'll have smoothies every single day for two weeks straight, other times you'll find me warming myself up with cosy bowls of porridge, but right now it's all about the buckwheat pudding!  I have shared a buckwheat 'porridge' recipe a couple of years ago (find recipe here), but then all of a sudden I stopped making it. I haven't added buckwheat groats to my shopping list in like forever and I think that's why I fell out of making them, but now buckwheat puddings are back baby and they're here to stay!  If you like thick smoothies, you'll love buckwheat puddings! It's [...]

Middle Eastern Tenderstem® Salad

Middle Eastern Tenderstem® Salad So many of us struggle to get in our recommended five-a-day servings of fruit and vegetables. I think mainly the problem is we don't always know how to fit it in and how to make them exciting, especially vegetables. To make sure I get my five-a-day in, I always make sure I have some form of greens on the side of my main dish. Whether that be salad, sauteed spinach, kale or colourful steamed, boiled or roasted veggies.   There is no question that fruit and vegetables are an essential part of our diets, essential being a key word here as they're so important for our health and wellbeing. However, it can seem a chore finding fun and exciting [...]

Asian Edamame Burgers (Vegan & Gluten-free)

Asian Edamame Burgers (Vegan & Gluten-free) It's the first official working day of 2018 and everyone (including myself) will be faced with the struggles of going back to reality and a normal routine. This year is proving to be even more of a struggle for me than previous years. I wasn't even supposed to be taking time out during the Christmas period. I had planned on spending the last 2 weeks of December studying, but guess what? I didn't even touch any of my study material! I ended up 'unintentionally' taking the 2 weeks off, which was nice, only it didn't feel like a proper break. Every evening I would go to bed with the intention of waking up and spending the [...]

Vegan & Gluten-free Christmas Gingerbread Cake

Vegan & Gluten-free Christmas Gingerbread Cake Just under two weeks until Christmas (woohoo!). Can you believe how fast time is flying? It doesn’t feel that long ago when we were about to welcome 2017, and look at us now. The year is almost over and we’ll soon be welcoming 2018! Crazy! I’ve created something really special to help you celebrate Christmas in style! A gingerbread cake topped with whipped coconut cream and decorated with gingerbread Christmas trees and stars. A really simple and easy to follow recipe that looks super festive and so impressive! A lot of people put so much time and effort into making the Christmas dinner that dessert often gets neglected. I know you can easily buy [...]

Coffee Vanilla Tarts (Vegan & Gluten-free)

Coffee Vanilla Tarts (Vegan & Gluten-free) Creamy mini tarts filled with coffee and vanilla flavoured cream. A simple recipe that calls for few ingredients, but results in something so delicious and aesthetically-pleasing! I'm one of those people who probably loves coffee desserts more than actually drinking coffee. Don't get me wrong, I do love a good cup of milky coffee, but there's something special about a coffee dessert. Like chocolate desserts, I like how the bitter taste of the coffee complements the sweetness of a dessert. They're especially delicious during winter months when you need something more rich, comforting and decadent.  Although I no longer drink coffee, I still like a good coffee dessert. The only reason I avoid coffee and caffeine in [...]

Chocolate Mint Mousse Pie (Vegan & Gluten-free)

Chocolate Mint Mousse Pie I love mint and chocolate. I think that combination is so delicious, especially in the form of a post dinner treat. The chocolate gives the desserts a decadent feel and the mint is just so refreshing after a meal! Recently I posted a mint Oreo recipe where I spoke more about my love for this flavour combination (click here to read more about it)! It made me realise that I haven't really experimented with mint and chocolate much in my recipes before, so now all I want to do is create mint chocolate recipes!   So today, I'm sharing with you this, rich, smooth and decadent chocolate mint mousse pie! A simple oaty base with a lush, velvety centre made using only 4 ingredients!   You'll find [...]

Homemade Jammie Dodgers (Vegan & Gluten-free)

Homemade Jammie Dodgers (Vegan & Gluten-free) One of my favourite indulgent treats is Jammie Dodgers! If you don't live in the UK you may have never heard of these fun titled biscuits (also known as cookies in other parts of the world!). They're a popular British treat made up of two shortbread biscuits with a layer of strawberry jam sandwiched in between.  I really do love their name. They sound so mischievous and naughty. If cookies got together, Jammie Dodgers would be the ones that want to cause havoc and mayhem, but in reality when you see them, they look the absolute opposite of that. They're so cute and innocent with a heart cut out in the middle, a sweet fruity centre and [...]

Tofu Katsu Curry (Vegan & Gluten-free)

Tofu Katsu Curry (Vegan & Gluten-free) Fridays are usually our treat (some might call it cheat) days. I usually make something more 'takeaway like' rather than my usually healthy salads, quinoa, buckwheat pasta, tofu and roasted vegetables. We usually follow that with a movie, some popcorn and these quinoa & kale puffs that we're obsessed with! They're not the healthiest, but definitely healthier than regular crisps and eating them on a Friday night after a hard week of work has become a bit of a tradition for the hubby and I!  Today, I'm making a dish that I usually order when I go to Japanese/Asian restaurants - Katsu curry! If you've never tried katsu curry then you're seriously missing out! [...]

Plum Blueberry Galette (Vegan & Gluten-free)

Plum Blueberry Galette (Vegan & Gluten-free) The weekend is finally here! It's been a long and tiring week, and even though I'll still be working today and tomorrow, I love the calmness that comes with the weekend. Especially Saturdays! It's a chance for me to reflect on the week that's gone and a chance to work out what I need to do for the week ahead. And I love not having to worry about responding to a ton of emails or getting back to clients until Monday. It just feels so much more relaxed.  Yesterday was my first day back at college. Some of you may already know that I enrolled into a Nutrition course (click here to find out more) [...]
