Vegan Rocky Road Fudge

I'm welcoming the new year with this vegan rocky road fudge recipe - creamy, indulgent and so so delicious. All while being gluten-free and dairy free. I opted to use xylitol to sweeten it so the fudge itself is sugar-free; however, I struggled to find vegan marshmallow that was also sugar-free, so I'm just using what I could get hold of!

Healthy Christmas Pudding Balls

I’m not going to argue that Christmas pudding is probably one of the perfect traditional post-Christmas dinner desserts; However, it does take hours to make yourself. Of course you always have the option of buying a ready made Christmas pudding which will most likely be full of sugars and additives. I’m not saying you shouldn’t indulge, but if you would prefer a healthier treat that you can make at home in less than 15 minutes, then I've got you covered.

Mango Banana and Coconut Smoothie

Sometimes all you need to lift your mood and energy is a nice, cold and refreshing smoothie! And what's more refreshing than a tropical mango banana and coconut smoothie?Even the colour is bright and cheerful! Naturally sweet from the mango and banana with a hint of coconut.

Avocado Tomato Bruschetta

I know I'm not alone when I say this - I'm obsessed with avocados! Another thing that I love is bruschetta - the crispy bread it's served on, the flavours and the simplicity of the idea! I've made simple tomato and basil bruschetta many times, then one day it occurred to me, why not add avocado? It made perfect sense.

Vegan Avocado Banana Bread

I absolutely adore this recipe! This bread is so moist, sweet and really good for you! Baking is my passion, I can easily live on baked goods (breads, cakes, cookies...you name it!), but they have to be healthy, of course! Otherwise the guilt would totally take over, not to mention the bloating and mood swings that follow eating sugary, fatty goods!
