Peanut Butter Chocolate Oat Cups

Delicious oaty cups with a layer of peanut butter all topped with smooth chocolate - these Peanut Butter Chocolate Oat Cups are super delicious and packed with goodness. Even though we've had many hot days here in the UK, that shouldn't stop us from the joy of making our own treats. The way around it is to make desserts that don't require you turning on the oven. The last thing you want on a hot stuffy day is to add to the unbearable heat by turning on the oven unnecessarily. Treats like these peanut butter chocolate oat cups are perfect for such warm and clammy days. They're no-bake and they're served cold straight from the fridge. The no baking part [...]

Vegan Gluten-free Matcha Pistachio Butter Cookies

Deliciously light and so pretty, these matcha pistachio butter cookies are the perfect treat to enjoy this New Year's Eve! I've taken a simple butter cookie recipe and made it both vegan AND gluten-free. Although I used oats instead of flour, it's not the healthiest dessert I've ever made as there is a lot of dairy-free butter in there and I used icing sugar to sweeten. However, it's New Year's Eve in a couple of days and if we can't enjoy an indulgent treat now, then when can we? Right? I dipped them in matcha white chocolate (I made my own by mixing matcha powder in melted white chocolate) and topped them with chopped pistachios to make them even fancier, [...]

Gluten-Free Vegan Yule Log

*This post is sponsored by FREEE* If you’re looking for a show-stopping dessert, this gluten-free vegan yule log is for you! A delicious chocolate sponge with a buttercream filling and a decadent ganache topping – what’s not to love? Yule logs can be tricky, but somehow FREEE managed to make a really easy fool-proof recipe that’s both vegan and gluten-free! The sponge is so chocolatey (and easy to roll!) with a deliciously smooth filling and a lush ganache. How they were able to tick all those boxes, I don’t know! I must admit I’d never made a yule log before. They seemed too faffy and long winded, but when I saw how simple the instructions for this recipe were, I [...]

Gluten-Free Vegan Gingerbread Millionaires Shortbread

*This post is sponsored by FREEE* Delicious and decadent, these gingerbread millionaire shortbread are perfect for the festive season and they happen to be both gluten-free AND vegan! I can’t believe there’s only a few more sleeps left before Christmas Day! Is it just me or has this year flown by? If you’re looking for a last-minute festive treat that’s both gluten-free and vegan (and delicious!), then you have to try these festive gingerbread millionaires shortbread. I don’t know anyone that doesn’t love millionaires shortbread, so I decided to put a fun spin on a classic dessert and make it festive by adding gingerbread spices (ginger, cinnamon and allspice) in the caramel centre. I also used date molasses to add [...]

Coconut Caramel Bars

A delicious sweet treat that's super easy to make, these coconut caramel bars are the perfect post meal treat! Have you seen the new Celebrations Christmas advert? You know, the one where the bounty bar is lonely and no one loves him. It's become a running joke that the humble Bounty bar is the one chocolate left untouched every Christmas when the Celebration box comes out. What?? Is it just me that ALWAYS picks a bounty before any of the other Celebrations chocs? I'd be happy with a box full of bounty bars and nothing else. Actually, my partner is the same as me. Bounty is his favourite, so neither of us can understand why they're so unloved! I love [...]

Chocolate Filled Peanut Butter Energy Balls

A delicious healthier snack to keep your craving at bay - these chocolate filled peanut butter energy balls are satisfying, yet made with healthier ingredients. I'm sure I'm not the only feeling this, but since the temperature suddenly dropped a couple of weeks ago, I seem to be finding myself a lot hungrier than usual. I want to eat all the time! The clocks going back and losing day light hasn't helped either. The days have become so gloomy that I'm finding myself seeking comfort in food. I do separate my 'treats' from my everyday snacks and I have to make an active effort not to constantly snack on unhealthy treats. A biscuit or a dessert here and there as [...]

Chocolate Tahini Cardamom Squares

Delicious, decadent and fudgy - these chocolate tahini cardamom bars are no-bake, made with healthier ingredients and are packed with aromatic flavours! If you've followed my blog and socials for a while, you'll know all about my love for tahini. I have countless recipes (mainly desserts) where tahini is the star of the show. You'll also know that I'm a self confessed chocoholic, so of course I'm always trying to marry those two ingredients together to make as many yummy treats as possible! I read this quote by Ottolenghi the other day where he said "Tahini is something that runs in the veins of the people in the Middle East” and “It's like olive oil to southern Europe.”. That definitely [...]

Vegan Lemon Loaf

A deliciously tangy treat - this vegan lemon loaf is so tasty and tart without being too sweet. The perfect pick me up on cold, grim days. I'm taking a break today from my usual chocolatey desserts to share something fruity for a change. It's been so gloomy and dull in the UK the past few days that I've felt like I needed something to brighten up the day and my mood. Lemon desserts always have that effect on me, so I had to make one today. Loaf cakes are probably my favourite type of cake. They're so dense, moist and satisfying. I'm not a big fan of cakes with cream or frosting, and loaf cakes don't usually come with [...]

Raspberry Chocolate Galette

A simple fruity dessert with a hint of chocolate - this raspberry chocolate galette is made using healthier ingredients and less sugar. Great for a light post-dinner treat! I'm a huge dessert fan and have a major sweet tooth (as you'll probably be able to tell by looking at my Instagram page!), and I always try to make my desserts as healthy as possible. I also want them to taste good, which is tricky without using some sort of sugar or sweeteners and fat - both of which are extremely demonised. That's why I tend to stick to natural sweeteners like dates, which are high in fibre and healthier fats like nut butters. However, those ingredients don't always work in [...]

Hazelnut Cream Bars

A biscuit base, smooth hazelnut centre all topped with dark chocolate - these hazelnut cream bars are so delicious and dreamy! I made these copycat Kinder Bueno Bars a few weeks ago and they were a massive hit! What I love most about them is that the hazelnut cream centre is literally made up of 2 ingredients only - white chocolate and hazelnut butter! I just love recipes with few ingredients. I wanted to use that 2 ingredient hazelnut cream and incorporate it into another one of my popular recipes - these Biscoff Squares. These hazelnut cream bars are made using healthier ingredients like oats, ground almonds and hazelnut butter. I always try to use less sugar/sweetener in my treats [...]
