Healthy Oat Waffles (Gluten-free)

What's so special about waffles? I never really saw what all the fuss was about, until now! Since hubby was given a waffle maker for his birthday, I tried it for the first time and fell in love! Pancake weekends are now referred to as waffle weekends! Don't get me wrong, I will always love my pancakes. The thing about waffles, and it's something that you can never get with pancakes, is their crispiness.

Baked Tamari & Maple Tofu with Rice Noodles

I've been eating quite a lot of tofu and I'm really enjoying experimenting with it at the moment. Since I've decided to start cutting back on my meat consumption and to stop cooking it at home, tofu has become a life saver! Vegan Peanut Butter Cheesecake

I made this cheesecake for my brother's birthday the other day. I thought it would be a nice change from a regular birthday cake, plus he likes peanut butter and chocolate and I thought that combo would go so much better in the form of a cheesecake! This cheesecake is vegan, dairy-free and gluten-free.

Chocolate Porridge Recipe (Vegan, Gluten-free)

Chocolate for breakfast, who could say no to that? I love porridge, and adding chocolate can only make it taste that much more delicious. I'm sure you would all agree with me! However, just because this recipe has the word 'chocolate' in its title it does not mean it's not healthy, in fact, it's the opposite. Full of good carbs, natural sweeteners, good fats and antioxidants. This chocolate porridge recipe only takes 10 minutes to make (because who has more than 10 minutes to prepare breakfast!)

White potatoes has such a bad reputation now, along with bread, rice...etc, but I don't see anything wrong with eating potatoes every now and then as part of a balanced diet. True, sweet potato is better for you as it offers an impressive serving of vitamin A which white potato lacks, but it's still a good form of carbohydrate to include in your diet.
