Gluten Free Vegan English Pancake Recipe – Perfect for pancake day!
When it comes to making healthy cookies, achieving a crunchy texture is not the easiest thing to do. Most of my healthier cookies tend to be soft or chewy, but if I were to make any cookie recipe crunchy, it had to be this one!

As some of you already know, I like keeping my recipes simple. To make this gluten free vegetarian spaghetti I’m making a simple tomato sauce using canned tomatoes and tomato puree and flavouring it with garlic, basil, chilli flakes and lemon jucie. I’m adding peas for some extra colour and texture but feel free to use minced meat or prawns for some protein.

Whenever it’s someone’s birthday I’m in a dilemma; do I attempt to make a healthy cake? What if the birthday boy or girl doesn’t like it? What if it doesn’t turn out the way I expect it to? Should I take the risk? All these questions go through my mind and most of the time they put me off trying to bake a healthy birthday cake.
