This recipe is slightly more difficult compared to my usual 4 or 5 ingredient recipes, but the result is so worth the extra effort! Easy breakfast cookies with added protein and a source of fibre and healthy fats! These no-bake breakfast protein cookies are great as a light breakfast for busy days or even a healthier snack.
