I only recently came to realise that salads can be hearty, filling and satisfying. Before starting my clean eating journey, I always viewed salads as something you have on the side of your main meal. When going out to restaurants, I wouldn’t even consider looking at the salad section of the menu. “How can a few leaves and some tomatoes fill you up? Salads are boring” I was so wrong!

Guacamole goes with everything: salads, vegetables, meat, in sandwiches…I make so many different variations all the time depending on what ingredients I have, but mostly how lazy I’m feeling! Usually, I’ll scoop a ripe avocado onto a plate, mash it with a fork, add lots of fresh lemon juice and a sprinkle of pepper and call it ‘Guacamole’. It tastes so good and fresh simply like that, but if you’re having Mexican food (say Fajitas!) then you have to do it properly.

I feel that Brussels sprouts are neglected all year round apart from Christmas. I can only find them locally around this time and it makes me sad, because I LOVE BRUSSELS SPROUTS! I realise not everyone shares my passion for the humble sprout and I guess I can understand why. I always used to boil or steam my Brussels sprouts which I must admit did get boring after a while. That’s before I discovered roasting them instead!
