Gluten Free Vegetarian Spaghetti

As some of you already know, I like keeping my recipes simple. To make this gluten free vegetarian spaghetti I'm making a simple tomato sauce using canned tomatoes and tomato puree and flavouring it with garlic, basil, chilli flakes and lemon jucie. I'm adding peas for some extra colour and texture but feel free to use minced meat or prawns for some protein.

Butternut Squash Kale Quinoa

I'm always making quinoa, but I rarely make it plain. I always add things like beans, nuts and lot of vegetables. It's so easy and quick to make so it's perfect for when you're in a hurry and need something quick. I like to make a huge batch and store it in the fridge to have for lunch throughout the week. It makes an amazing lunch on the go - better than your average sandwich and definitely much healthier, and more interesting (in my opinion!).

Sweet Potato Gnocchi with Red Pesto

You know sometimes when you come across a recipe and straight away you think "This looks too difficult" and you move on before actually reading the recipe and knowing what goes into it, well for me, homemade gnocchi was one of those recipes! I'd seen a few people making homemade sweet potato gnocchi but I've always thought there is no way this is not going to be fiddly! Now I realise how completely wrong I was!

Vegan Burger Recipe

I love vegetable and bean burgers. They may not taste like meat but they can be just as satisfying without leaving you feeling heavy and sluggish from the high fat and oil content. To me, normal meat burgers are a treat - one that I would only probably have once or twice a year if even that. These vegan burgers however, I would happily eat everyday!

Quick Prawn Coconut Curry

Quick Prawn Coconut Curry This dish has become a dinner staple in my household. Whenever I'm stuck for meal ideas or want something quick and easy, I always turn to this quick prawn coconut curry. This is my version of a 'curry in a hurry' - It will only take 15-20 minutes for a lovely, warming curry that's full of flavours. This recipe is gluten-free, dairy-free and can easily be made vegetarian and vegan by replacing the prawns with more vegetables (potatoes, cauliflower, butternut squash...the options are endless!) I also like making a chicken version and a bean version, all equally as good! This quick prawn coconut curry is a great option for those evenings when you have very little [...]

Roasted Brussels Sprouts with Cranberries and Pecans

I feel that Brussels sprouts are neglected all year round apart from Christmas. I can only find them locally around this time and it makes me sad, because I LOVE BRUSSELS SPROUTS! I realise not everyone shares my passion for the humble sprout and I guess I can understand why. I always used to boil or steam my Brussels sprouts which I must admit did get boring after a while. That's before I discovered roasting them instead!
