Easy breakfast cookies with added protein and a source of fibre and healthy fats! These no-bake breakfast protein cookies are great as a light breakfast for busy days or even a healthier snack. Made with a mixture of oats, almond butter, plant milk, vegan protein, cocoa powder and a little bit of maple syrup to sweeten. I added chocolate chips, but you can leave them out or add things like cacao nibs, nuts or seeds instead! They're super easy to make and require no baking! They also make a yummy sweet treat/dessert.
