Baking is my therapy. Whenever I’m feeling stressed or agitated, I always find that baking makes me feel better. The whole process of sifting, measuring, mixing, then knowing I’ll have something yummy to enjoy at the end of it. It also leaves the house smelling so homely and inviting 🙂 my house definitely smelt good when making these Chai Spiced oat bars.

Baked Tamari & Maple Tofu with Rice Noodles

I’ve been eating quite a lot of tofu and I’m really enjoying experimenting with it at the moment. Since I’ve decided to start cutting back on my meat consumption and to stop cooking it at home, tofu has become a life saver! It’s an amazing vegetarian/vegan source of protein and it’s quite easy to cook once you know what you’re doing.

I made this cheesecake for my brother’s birthday the other day. I thought it would be a nice change from a regular birthday cake, plus he likes peanut butter and chocolate and I thought that combo would go so much better in the form of a cheesecake!

This cheesecake is vegan, dairy-free and gluten-free.

White potatoes has such a bad reputation now, along with bread, rice…etc, but I don’t see anything wrong with eating potatoes every now and then as part of a balanced diet. True, sweet potato is better for you as it offers an impressive serving of vitamin A which white potato lacks, but it’s still a good form of carbohydrate to include in your diet.
