So these brownies were kind of an accident. Is it just me or are the best recipes usually the ones that don't go to plan, instead they result in something even better! I was trying to make egg free chocolate cookies, but they didn't turn out exactly the way I planned, so I decided to turn them into brownies instead...and here's the result!

Vegan Peanut Butter Cheesecake

I made this cheesecake for my brother's birthday the other day. I thought it would be a nice change from a regular birthday cake, plus he likes peanut butter and chocolate and I thought that combo would go so much better in the form of a cheesecake! This cheesecake is vegan, dairy-free and gluten-free.

Lemon & Parsley Cannellini Freekeh Recipe

Freekeh is a green wheat popular in Middle Eastern cuisine that's harvested when the grain is still young. Unlike the 'adult' version of the wheat, Freekeh contains more protein, minerals and fibre. It contains three times as much fibre as brown rice. Why does this make it special? Well a high fibre content means it's digested slowly and has a low GI number. A low GI means it doesn't cause the blood sugar to spike the way rice would. It also means it will make you feel fuller so you don't end up overeating.
