What's so special about waffles? I never really saw what all the fuss was about, until now! Since hubby was given a waffle maker for his birthday, I tried it for the first time and fell in love! Pancake weekends are now referred to as waffle weekends! Don't get me wrong, I will always love my pancakes. The thing about waffles, and it's something that you can never get with pancakes, is their crispiness.
I've been eating quite a lot of tofu and I'm really enjoying experimenting with it at the moment. Since I've decided to start cutting back on my meat consumption and to stop cooking it at home, tofu has become a life saver! I made this cheesecake for my brother's birthday the other day. I thought it would be a nice change from a regular birthday cake, plus he likes peanut butter and chocolate and I thought that combo would go so much better in the form of a cheesecake! True, sweet potato is better for you as it offers an impressive serving of vitamin A which white potato lacks, but it's still a good form of carbohydrate to include in your diet.
Freekeh is a green wheat popular in Middle Eastern cuisine that's harvested when the grain is still young. Unlike the 'adult' version of the wheat, Freekeh contains more protein, minerals and fibre. It contains three times as much fibre as brown rice. Why does this make it special? Well a high fibre content means it's digested slowly and has a low GI number. A low GI means it doesn't cause the blood sugar to spike the way rice would. It also means it will make you feel fuller so you don't end up overeating.
