Za’atar Pitta Chips & Baba Ganoush

If you've followed me for a while you'll know that I grew up in the Middle East and so the cuisine and the flavours associated with it hold a special place in my heart. There are so many amazing ingredients and tastes that can help brin healthy meals to life without having to use too much of the other ingredients that make food taste good, namely oil, salt and sugar! Za'atar is one ingredient I can't get enough of. It's typically used as a flatbread/Arabic pizza topping, but it's also amazing as a convenient and yummy seasoning for vegetables, meats and dips. The easiest way to enjoy za'atar (a herb mix which you can now find in most major supermarkets!) [...]

Biscoff Chocolate Cups (vegan, no-bake)

Super easy treats made using only 5 ingredients! Recipes really don't get easier than this! These biscoff chocolate cups are a must try! Rich no-bake chocolate cups made with oats, cocoa and a little bit of coconut oil to help hold the mix together and maple syrup to sweeten. All you have to do is press them into sillicon mini chocolate moulds, then freeze for a few minutes! The filling is literally one ingredient - Biscoff vegan spread. That's it! Melted in the microwave to make it runny and easy to pour into the chocolate cups, then refrigerated to set creating a smooth and creamy delicious filling! Why you need to try these Biscoff chocolate cups: They're so easy to [...]

Vegan Raspberry Cheesecake Pots

(AD) A delicious dessert that takes no time at all to put together. A simple treat made up of a 2 ingredient base, a creamy cheesecake centre and a berrylicious topping! Served in pots/glasses for ease. I’ve always preferred no-bake cheesecakes to the baked versions as these taste so much lighter and the no baking part means there’s one less thing to do. For me, the easier the recipe the better, especially when it comes to making desserts. Now that so many of us are spending more time cooking our main meals at home, a lot of us are in search for quick and easy treats that call for few ingredients and little washing up afterwards. Serving these delicious Vegan [...]

Chickpea Cookie Dough Balls

I'm a huge fan of the idea of adding beans, lentils and pulses into sweet treats. They bump up the fibre, mineral and vitamin content while giving desserts a lovely moist texture. It also means you don't need to add as much flour or even cut it out completely! Beans & pulses are so underrated, under-consumed and unappreciated. They're such an amazing source of nutrients, protein and fibre and yet as a nation we hardly ever eat them! Baked beans are probably the only exception but they come with added salt and sugar and to be fair there is only so much you can do with them. On toast, on baked potatoes or on the side of a fry up.  Beans and pulses are [...]

Festive Gingerbread Bundt Cake

*This post is sponsored by FREEE* Only a week left before Christmas! If you’re looking for a last-minute festive treat that’s both gluten-free and vegan (and delicious!), then you have to try this festive gingerbread bundt cake! One of the best things about Christmas is all the yummy baked goods. What better excuse to bake than Christmas? And for me, when I think about festive desserts, the first one that comes to mind is gingerbread! Those warming and aromatic spices fill the house with so much festivity and cheer. Typically gingerbread is made in the form of cookies or gingerbread men (I actually shared my take on gingerbread cookies, which you can find here), but I wanted to incorporate it [...]

Festive Orange Cranberry Banana Bread

*This post is sponsored by FREEE* You can’t beat a good slice of banana bread – it never fails to impress, but only when it’s rich, moist and packed with yummy flavours, like this festive orange cranberry banana bread is. Even though I’m a HUGE banana bread fan, I somehow managed not to make one throughout both lockdowns when everyone else was going banana bread mad! I’ve recently been craving a moist slice of sweet banana bread though, so decided to make a festive version seeing that Christmas is only 2 weeks away! ? This banana bread is completely gluten-free and vegan. I used a mixture of FREEE Gluten-Free Plain White Flour and ground almonds to give it that moist [...]

Festive Chocolate Orange Scones Vegan & Gluten-free

*This post is sponsored by FREEE* Is there anything more comforting on a cold, rainy day than a lovely warm homemade scone and a cup of tea? How about a chocolate orange scone? It’s definitely my go to treat for this time of year! These chocolate orange scones are super comforting and they couldn’t be easier to make. I used a mixture of FREEE Gluten Free Self Raising White Flour and oat flour, which I made myself by blending gluten-free oats – try FREEE’s Gluten Free Porridge Oats - into a fine flour in the food processor. The scones are also vegan, but they don’t have to be if you’re not avoiding milk or butter. They can also easily be [...]

California Walnut Za’atar Flat Breads

*This post is sponsored by California Walnuts* This right here is one of my childhood favourites! If you’ve never tried (or even heard of) za’atar you’re missing out big time! It’s basically a blend of herbs (mainly thyme and oregano) with sesame seeds. It’s usually mixed with olive oil and lemon juice then spread on bread/dough to create the most drool worthy flavour combination! It’s definitely a comfort meal for me - a Middle Eastern pizza if you like. I’m adding California Walnut ‘mince’ to my version to add some healthy fats and protein. Did you know that walnuts are the only tree nut to contain a rich source of the plant-based omega-3, alpha-linolenic acid (ALA) 2.7g/ 30g*? Each 30g [...]

Peanut Butter Protein Breakfast Pudding

*This post is sponsored by Bulk Powders*  Silky, smooth and satisfying breakfast with added protein. This Peanut Butter protein breakfast pudding tastes more like a dessert, but it's packed with fibre, healthy fats and protein. I love adding protein to my breakfast as it prevents sugar slumps. I used to get the worst sugar crashes. That jittery feeling a couple of hours after breakfast that leaves me feeling irritable, on edge and unable to concentrate. I still get those crashes if I don't eat a well balanced breakfast with protein and fat. Simple carb rich breakfasts low in fat and protein just don't suit me well at all! And so far what I've seen in the clinics I've observed as well [...]
