Healthy Christmas Tree Cupcakes (Gluten-free & Vegan)
Can you believe it's December tomorrow? Where has this year gone! Perhaps it's a sign I'm getting old? Or maybe just keeping busy. I would like to think it's because of the latter haha!

Nut butters can be such a life saver in the morning. They're a great go-to option, especially on those days when you need something quick or can't be bothered thinking of something to make but still want to eat something healthy. They're a great source of vitamins, minerals, healthy fats and protein to start your day off right. They're also a great addition to porridge.
Banoffee Pie is a classic British dessert and one of my favourite all time desserts. Crumbly biscuit base, rich caramel centre topped with sliced banana and fresh cream...what's not to like? No one can resist a good slice of banoffee pie!
Autumn is here and it's time to bring out the festive spices. Cinnamon, cloves, nutmeg, ginger and of course not forgetting my favourite spice of all...cardamom!!
I'm absolutely obsessed with these cookies. I can honestly say these are the best healthy cookies I've ever made! They're so addictive! I've made these so many times over the last couple of years so I have no idea why it has taken me this long to share it!
You can't beat a good BANANA flavoured dessert, especially when that dessert is a CHEESECAKE! I don't think I've ever had a banana cheesecake before but I had no doubt banana would go well with cheesecake.
Vegan Chocolate Mousse
What's so special about waffles? I never really saw what all the fuss was about, until now! Since hubby was given a waffle maker for his birthday, I tried it for the first time and fell in love! Pancake weekends are now referred to as waffle weekends! Don't get me wrong, I will always love my pancakes. The thing about waffles, and it's something that you can never get with pancakes, is their crispiness.
I've been eating quite a lot of tofu and I'm really enjoying experimenting with it at the moment. Since I've decided to start cutting back on my meat consumption and to stop cooking it at home, tofu has become a life saver! It's an amazing vegetarian/vegan source of protein and it's quite easy to cook once you know what you're doing.
I made this cheesecake for my brother's birthday the other day. I thought it would be a nice change from a regular birthday cake, plus he likes peanut butter and chocolate and I thought that combo would go so much better in the form of a cheesecake! This cheesecake is vegan, dairy-free and gluten-free.
