PB&J Pop Tarts – Vegan & Gluten-free

PB&J Pop Tarts - Vegan & Gluten-free I've probably only tried Pop Tarts once or twice many many years ago. I don't even remember the flavour I tried. I do however remember always thinking they're so cute! Because they're imported from the U.S. they were always too expensive for us and considered a luxury item that we just didn't need. I remember them being around the £5 mark but I think they're a lot cheaper now and more readily available here in the UK, but you would never catch me eating one for breakfast nowadays! If you've seen the list of ingredients on one of the packets, you'll know why!  One thing that I do love about Pop Tarts is all [...]

Vegan Tofu ‘Chicken’ Nuggets

Vegan Tofu 'Chicken' Nuggets I was only exposed to chicken nuggets when I moved to the UK and as you can imagine, I absolutely fell in love with them! Crispy on the outside, soft on the inside and full of flavour. You can easily understand why every kid in the country is obsessed with them!  As delicious as they are, chicken nuggets aren't exactly known for their nutrition content. Unless homemade, they're heavily processed with lots of other unwanted added ingredients. Not only is my version lower in fat, it's also high in iron, calcium, magnesium, selenium, zinc and omega-3, all of which can be lacking in a not so well planned plant-based diet. Tofu is an amazing source of many micro nutrients and is [...]

Chocolate Crumpets Vegan & Gluten-free with Salted Caramel Spread

Chocolate Crumpets Vegan & Gluten-free with Salted Caramel Spread Crumpets are such a quintessential British tea time treat. Griddle cakes that look like pancakes and cooked like pancakes only they're thicker, spongier/chewier and full of holes!  You'll find this treat in many British households, usually shop bought as the idea of making homemade crumpets seems so daunting and definitely a lot of work. That's what I thought anyway until I tried them myself. You do have to wait for the dough to rise, like with any homemade yeasted bread, but once that's done there isn't much to it!  I know you can now buy gluten-free crumpets, but they're not vegan. I wanted to create a version that both vegans and anyone [...]

Vegan Gluten-free French Fancies

Vegan Gluten-free French Fancies First of all I would like to wish my mum and all the amazing mothers out there a ?HAPPY MOTHER'S DAY? If you live in the UK you will be very familiar with french fancies. They're these cute mini sponge cakes, similar to petit four, with a jam centre and covered in different coloured icing - pink (strawberry), yellow (lemon) and brown (chocolate). I used to find the sponge in french fancies a little dry, which wasn't too bad since the jam and icing added a bit of moisture and complemented the whole thing, but I still prefer my cakes a little more moist, so I wanted to make mine a little denser and not as spongy. [...]

Rainbow Cauliflower Pizza (Vegan & Gluten-free)

Rainbow Cauliflower Pizza (Vegan & Gluten-free) After posting these Unicorn Doughnuts a few days ago, I was inspired to create another colourful recipe to celebrate the arrival of spring. I feel like my recipes have been very monotone recently with a lot of browns and beiges and I thought it was about time I broke the mould and stirred things up a little. When I think of pizza, the words 'healthy' and 'colourful' don't usually pop into my mind. They're not usually healthy and more often than not look very uncolourful as there's a layer of cheese covering most of the top hiding anything that lies underneath including bright veggies (if there are any at all!). I've attempted making cauliflower pizza crusts a couple [...]

Unicorn Doughnuts – Vegan & Gluten-free

Unicorn Doughnuts - Vegan & Gluten-free Is it just me or is this year flying by so quickly? How it almost April already?? Today is the first day of spring so it seemed fitting that I would post a more colourful dessert as apposed to my usual chocolate coloured desserts! I've always been drawn to pastel colours. There is such a calming and relaxing element to them and as someone who suffers with anxiety, I need all the calm I can get. I had seen loads of 'unicorn' inspired recipes on social media and instantly knew I wanted to join the craze, even if it is only a trend that will pass in a couple of months. If there is a [...]

‘Nutella’ Stuffed Cookie Dough Balls

'Nutella' Stuffed Cookie Dough Balls Nutella is one of those things I miss A LOT since cutting out dairy and junk food and trying to eat more consciously. I know eating a spoon of it won't kill me and if I really wanted to I would eat it, but it's easier for me to avoid such foods because once I have a taste, I want to eat the whole thing. I'm sure I'm not alone in this! It's like recently the hubby bought a bag of salted crisps and I had some while we were watching a film. I never crave salty foods, but since then I've had this crazy craving for crisps, despite always craving sweet food usually. Now all of a sudden all I [...]

Healthified Homemade Nutella (Video)

When you think of Nutella, you think 'hazelnut+cocoa', but when you look at the ingredients a typical jar is made up of only 13% hazelnuts! In fact, the first 2 ingredients are sugar and oil! That's not to say you cannot enjoy it from time to time as part of a balanced diet, but if you want to eat it on a daily basis, why not make you own healthy version that tastes equally as good!

Butternut Squash Spaghetti with Black Bean ‘Meatballs’

Butternut Squash Spaghetti with Black Bean 'Meatballs' To me nothing says comfort like a nice big plate of pasta, especially spaghetti with a tomato sauce - yum! It's one of those meals you can always turn to when you need something to lift your mood and spirt. As delicious as it is, spaghetti usually leaves me feeling heavy and uncomfortable after, which is not the feeling you want to be left with when you're already down and seeking comfort. That's just counterproductive!  So I keep trying to find alternatives that taste delicious, but don't leave me with that same gluttonous feeling. I've tried courgette noodles which I know fools no one and can't exactly be called 'spaghetti' because the taste and texture is [...]

Vegan Gluten-free Wagon Wheels

Vegan Gluten-free Wagon Wheels Wagon Wheels - another classic British treat I just had to recreate. Do you sense a theme here? It seems I'm drawn to making healthified, vegan and gluten-free versions of some of Britain's favourite treats at the moment. So far I've made my own versions of Oreos, Twix, Snickers, Bounty Bars, Ferrero Rocher, Hobnobs, Jaffa Cakes and now Wagon Wheels! What's next? Who knows, but I'm really enjoyed experimenting with such classic sweet treats, and you seem to be enjoying them too! I say a British classic, however; a quick search online tells me that Wagon Wheels actually originated in Australia before moving base here. Now they seem to be popular the world over, and that doesn't [...]
