Vegan Gluten-free Chocolate Avocado Cake

Vegan Gluten-free Chocolate Avocado Cake One thing that my blog is missing is a good two layered chocolate cake. That's until now of course! I've finally got my act together and made a vegan and gluten-free rich chocolate cake with a lush chocolate frosting.  What makes the frosting so lush is the combination of melted dark chocolate mixed with the creaminess and richness of a good ripe avocado! Those two together make for the most decadent, out of this world and delicious frosting!  Many of you have asked me for more cake recipes, more specifically a chocolate cake recipe! I LOVE cakes but usually opt for making denser loaves and squares like my banana blueberry bread, banana walnut bread or [...]

Chocolate Crumpets Vegan & Gluten-free with Salted Caramel Spread

Chocolate Crumpets Vegan & Gluten-free with Salted Caramel Spread Crumpets are such a quintessential British tea time treat. Griddle cakes that look like pancakes and cooked like pancakes only they're thicker, spongier/chewier and full of holes!  You'll find this treat in many British households, usually shop bought as the idea of making homemade crumpets seems so daunting and definitely a lot of work. That's what I thought anyway until I tried them myself. You do have to wait for the dough to rise, like with any homemade yeasted bread, but once that's done there isn't much to it!  I know you can now buy gluten-free crumpets, but they're not vegan. I wanted to create a version that both vegans and anyone [...]

Homemade Raspberry Chocolate (Raw/Vegan/Dairy-free) – Video

Making your own dairy-free chocolate at home couldn't be easier! All you need is some coconut oil, cocoa powder and some sort of liquid sweetener. I like to add nut butter, especially cashew butter to make it more creamy and delicious :D but it's completely optional. I would however avoid using peanut butter because the taste is just too overpowering.

Healthy Middle Eastern Cardamom Cookies (Vegan & Gluten-free)

Healthy Middle Eastern Cardamom Cookies Growing up in the Middle East meant I got the chance to enjoy plenty of desserts flavoured with cardamom. I love it so much that I can safely say it's my favourite spice. The hubby on the other side, hates cardamom, so I don't get to use it as much as I would like to. However, with Eid (the festival of breaking of the fast) fast approaching, I really wanted to create a Middle Eastern dessert, something that I grew up eating during this time. Last year I created a healthy, vegan and gluten-free version of the most popular Iraqi cookie - Kleicha, or date rolls/date filled cookies and they were a big hit! This year, I wanted to [...]

Raw Oreos Recipe (Vegan & Gluten-free)

Raw Oreos Recipe (Vegan & Gluten-free) This recipe is one of my favourite cookie recipes, along with my date cookies and chocolate tahini cookies. The difference with these is that they're raw/no-bake and are best eaten chilled straight out of the fridge, so they're a really nice cool treat during summer, but are still rich and indulgent.  This recipe makes about 15 raw "oreos". Usually when I eat cookies, I simply can't stop eating them. I keep saying to myself 'OK, just one more and then that's it!' but end up reaching out for more anyway, which is a problem :P But because these raw oreos are quite rich, I feel satisfied after just eating one (sometimes two!) but no more than that. So they should last [...]

Raw Chocolate & Nut Energy Bites

Raw Chocolate & Nut Energy Bites I've recently cut out a few things from my diet including added sugar, gluten, processed foods and caffeinated drinks to try and heal my gut and reduce my anxiety levels. There are 2 things I'm really REALLY missing so far - tea and chocolate!  Over the years I have developed the habit of drinking way too much black tea. I could easily drink 7 cups a day, especially when I'm home and/or in the evenings, which as you can imagine it the worst time to be drinking caffeine! I also got used to ending each meal with something sweet, usually a square of dark chocolate. Although I would always have the 72-90% cocoa varieties, but they still have added sugar [...]
