Chocolate Covered Peppermint Patties

Chocolate Covered Peppermint Patties Here's how to make dairy-free/vegan peppermint patties, dipped in chocolate and sprinkled with crushed candy cane to make them look and taste extra special. Perfect treat to enjoy on Christmas day after indulging in a decadent Christmas meal.  After most meals I always crave something sweet to end my meal with, even if it's just a grape. I think growing up feeling deprived of sweets and treats has left me with a huge craving for them. So even after a really heavy meal, I still want something sweet to end with.  There's nothing better than enjoying an After Eight mint thin after a heavy meal, which lets face it is unavoidable on Christmas day! It wouldn't be [...]

Christmas Tree Brownies – Vegan & Gluten-free

Christmas Tree Brownies - Vegan & Gluten-free If you're looking for a super healthy Christmas sweet treat that tastes naughty, but is still good for you, you need to make these brownies! It doesn't get healthier than these Christmas tree brownies! Made using East End Foods dry chickpeas making them high in protein, fibre and minerals such as manganese, folate, iron and zinc.   Chickpeas make up a big part of my diet, I eat them on a daily basis in the form of falafel, stews, savoury bakes, calzone, pizza and HUMMUS (of course!), but I also love incorporating them into sweet treats to make them as healthy and beneficial as possible. Recent research suggests that the consumption of chickpeas (as well as other pulses [...]

Blueberry Banana Smoothie

Blueberry Banana Smoothie A delicious blend of frozen blueberries and bananas swirled in a glass, because everyone likes a pretty breakfast ;)  I'm a creature of habit so when I find something I like, especially when it comes to food, I tend to eat it over and over again without making changes  a) because I'm usually in the kitchen all day experimenting with recipes so I want something quick and easy for my own meals that requires no time or effort to make b) I try to pack my meals with as many nutrient dense ingredients as possible a) well, because sometimes I'm just lazy!  For example when it comes to breakfast, if I make a smoothie I will make a green smoothie [...]

Vegan & Gluten-free Dessert Pizza

Vegan & Gluten-free Dessert Pizza This is a fun, alternative dessert recipe that incorporate plenty of healthy plant-based ingredients without any refined flour, refined sugar or dairy products. Topped with fresh fruit, nuts and Snact fruit jerky. Snact create their fruit jerky using surplus produce that would otherwise be thrown away for being too big, too small or too ugly. Thousands of tons of perfectly edible fruit is thrown away every year because supermarkets don't want to buy imperfect produce. This is the fruit that doesn't even reach the shops, not the produce that is left unbought or the fruit and veg that we as a nation buy but then leave to go bad. I really find it mind boggling and it hurts my heart to think [...]

Unsweetened Applesauce Recipe

A few days ago I uploaded a post talking about applesauce, its benefits and its uses, so I thought this would be the perfect time to show you how I make my own homemade unsweetened applesauce. I use applesauce in a lot of my baking and you would be surprised at how easy it is to make at home! Essentially all you need are some apples, water, a peeler and a pan!

Raw Chocolate Peanut Butter Cheesecake

Raw Chocolate Peanut Butter Cheesecake Both the hubby and I are huge fans of cheesecake, but as someone who avoids dairy, refined carbs and sugar, regular animal fat and sugar-laden cheesecakes are off the menu for me. However, I do still crave a slice every now and then - that's when a raw cheesecake comes in handy! I'm pretty sure you'll agree with me when I say layered cheesecakes are ALWAYS better than a no-layered cheesecake. They just look so pretty when you slice into them and I like the distinguished flavours. Chocolate and peanut butter is such a classic and delicious pairing. I haven't yet come across someone who doesn't like those 2 flavours merged together. This raw chocolate peanut butter cheesecake is [...]

Vegan Custard Tarts (Gluten-free)

Vegan Custard Tarts When I started cutting out dairy, one of the many things I stopped eating was custard, and it's one of the many things I really missed! I had no idea how easy it was so make my own, homemade dairy-free version. It's ridiculously easy! AND it tastes just like 'normal' custard. How I wish I tried this recipe months and months ago! I missed out on so much custard goodness! I just realised this paragraph is full of exclamation marks!! Moving on... These vegan custard tarts taste like the 'real thing' and the custard part definitely tastes like the custard I remember and love. Sweet, thick and...vanillary? OK I think I just made that word up but [...]

Homemade Raspberry Chocolate (Raw/Vegan/Dairy-free) – Video

Making your own dairy-free chocolate at home couldn't be easier! All you need is some coconut oil, cocoa powder and some sort of liquid sweetener. I like to add nut butter, especially cashew butter to make it more creamy and delicious :D but it's completely optional. I would however avoid using peanut butter because the taste is just too overpowering.

Vegan Tahini Popsicles

Vegan Tahini Popsicles I'm afraid I might be a little late in sharing this recipe since it seems the sun has decided to retire after a couple of weeks of glorious weather! But I'm one of those people who can eat ice cream any time of the year. It always seems like the perfect light and refreshing after dinner dessert. If you haven't noticed already, a lot of my recent recipes have been based around tahini. I just can't get enough of the stuff! And since my Salted Caramel Tahini Cheesecake was such a hit, I just had to create another tahini treat. (and I have a few more on the way!). These vegan tahini popsicles are so creamy, rich and taste so good! Dipped in homemade [...]

Matcha Pinwheel Cookies (Vegan & Gluten-free)

Have you noticed that whenever you make 'healthy' cookies, they tend to be soft not crunchy? most healthy cookies I've seen are usually the soft variety, which is fine. I love cookies in any form, but every now and then I do crave a good crunchy cookie (or biscuit as we call it here in the UK!) ...
