Mixed Berry Chia Pudding

This recipe is as easy as they get! You literally only need 3 main ingredients and then you can add whatever else you like. Chia seeds have very quickly become one of my pantry staples that I can't live without! I've been using them particularly in baking as a substitute for eggs, especially when I'm looking for something denser and less spongy. I think chia eggs work so much better than flax eggs, does anyone else think that?

Healthy Vegan Brownies

Brownies are probably one of my favourite desserts. Dense, rich, sweet and most importantly full of chocolatey goodness! What's not to love?! I don't think I've ever come across anyone who doesn't love brownies. However, they do tend to leave a heavy feeling in my stomach. Healthy Rhubarb Crumble Bars

I must admit I’m not the biggest fan of fruit pies, or cooked fruit desserts. I prefer eating my fruit raw and cold; however, rhubarb is one of those fruit (a vegetable, actually!) that you can’t eat any other way apart from cooked…so I thought why not give it a try. It’s so deliciously tart and not too sweet. In fact, I only used 2 tbsp sweetener in the filling and it was just right! Traditional recipes use anywhere between ½ and 1 cup of sugar for the filling alone!
