Vegan and Gluten-free Pecan Oat Cookies

Vegan and Gluten-free Pecan Oat Cookies Deliciously crunchy vegan and gluten-free pecan oat cookies perfect enjoyed with a cup of tea as an afternoon treat :D A few weeks ago it dawned on me that I had't baked cookies in ages. How did that happen?? I used to bake cookies so regularly since they're my favourite kind of treat (that and chocolate ;) ). If you know me, you know I love cake, but I have to admit that I love cookies even more! Especially the crunchy kind.  To make up for the months of lack of cookies, I recently posted a chocolate hazelnut stuffed cookie recipe as well as a giant skillet chocolate chip cookie. Now, I'm sharing with you these vegan and gluten-free pecan oat [...]

Vegan & Gluten-free Chocolate Hazelnut Stuffed Cookies

Vegan & Gluten-free Chocolate Hazelnut Stuffed Cookies  There is so much buzz at the moment around The Great British Bake Off since the first episode was aired yesterday. Since the new season kicked started with cookies, I wanted to join the fun by offering up a stack of these vegan & gluten-free chocolate hazelnut stuffed cookies.  They're basically Nutella stuffed cookies, but I used a dairy-free version of the spread, which you can get here. It's not the healthiest thing in the world, I know, but at the same time a little won't do you any harm! In fact, enjoying one of these cookies will only leave you feeling happy and satisfied, which no doubt is good for your health! You know you really [...]

Protein Cookie Dough Cups (Vegan & Gluten-free)

Protein Cookie Dough Cups (Vegan & Gluten-free) My current cookie dough obsession continues! I recently posted these cookie dough bars and they seemed to go down a treat with you guys, so I decided to go back to the kitchen and whip up another cookie dough creation for you. This time with added protein :D  I try to make sure I consume enough protein throughout the day, which can sometimes be a struggle when trying to avoid meat and animal products. I ALWAYS add protein powder to my breakfast, whether that be in my smoothies, nicecream, overnight oats, porridge or chia pudding. I get the most awful blood sugar crashes between breakfast and lunch and need protein to help keep my blood sugar levels steady. Vegan [...]

No-Bake Peanut Butter Chocolate Pinwheels (Vegan & Gluten-free)

Peanut Butter Chocolate Pinwheels I'm really into quick and easy recipes at the moment that require only a handful of ingredients and it seems you're loving them too! After the success of my 3-ingredient chocolate crunch doughnuts (people went crazy for them on Pinterest!), I thought I would start creating more few ingredient recipes. I see the appeal of simple recipes. Because I create recipes and bake treats for a living, I sometimes forget that not everyone has much time to make their own treats and so don't give the time aspect of it much thought. But recently I found myself preoccupied with studies and clinic prep for my course that I haven't had almost no time to do anything else. It made [...]

Ice Cream Sandwiches 2 ways – Chocolate or Vanilla (Vegan & Gluten-free)

Ice Cream Sandwiches 2 Ways - Chocolate or Vanilla (Vegan & Gluten-free) We've been really lucky in the UK the last couple of months in that we've had the most amazing weather. There's been so much sunshine we almost don't know what to do with ourselves. None of us is used to this much heat and sun! You'll find some making the most of it and enjoying every second of it, and others complaining about it. I have to say I was one of the latter. Don't get me wrong, I love the sunshine, it's the heat I can't stand. It makes me feel so sleepy, lethargic and irritable. Especially since moving into our new place. It seems our flat just draws [...]

Strawberry Chocolate S’mores

Strawberry Chocolate S'mores S'mores aren't really a thing here in the UK, but they really should be! Two crunchy biscuits (aka cookies) with a melted marshmallow and melted chocolate. I can't think of anything better :D  I missed out on so many years of toasted marshmallow goodness. I really didn't know what I was missing out on until I tried one for the first time and I was hooked! Really puts the regular, un-toasted marshmallow to shame. And now you can get gelatine-free marshmallows too (yay!!). In celebration of the Royal Wedding, I've created a traditional American recipe with a British twist by adding in some chopped strawberries to give them a 'strawberries and cream' feel. Everyone is in agreement [...]

Cookie Dough Brownie Bars

Cookie Dough Brownie Bars A few years ago and before embarking on my health journey, I never thought healthier desserts existed. How can you have a dessert that's also somewhat good for you? It just couldn't be done, unless it was mainly fruit. Now I know the word 'health' and 'healthy' have different definitions to different people depending on their stand point. Just to give an example, I've come across people who don't even consider fruit healthy and avoid them at all cost because they're 'too high in sugar'. That notion still baffles me. When I say 'healthier' treats I mean treats that are lower in sugar and saturated fat but at the same higher in things like fibre. Treats that contain more 'whole' ingredients [...]

Chocolate Thumbprint Cookies (No-Bake, Vegan & Gluten-free)

Chocolate Thumbprint Cookies (No-Bake, Vegan & Gluten-free) I find thumbprint cookies so cute and fun to make. I recently made a blueberry pistachio & cardamom thumbprint cookie recipe, which received a lot of love on my Instagram feed. So, I thought why not create another one, but this time a no-bake version with a chocolate hazelnut centre. These no-bake chocolate thumbprint cookies are super easy to make and only call for five ingredients, well technically six, but who counts salt as an ingredient anyway? They're a really good back up treat idea when you need to whip up something quick either when you're craving something sweet or if you have guests coming over and have nothing to serve them. Whenever I'm expecting [...]

Vegan & Gluten-free Christmas Gingerbread Cake

Vegan & Gluten-free Christmas Gingerbread Cake Just under two weeks until Christmas (woohoo!). Can you believe how fast time is flying? It doesn’t feel that long ago when we were about to welcome 2017, and look at us now. The year is almost over and we’ll soon be welcoming 2018! Crazy! I’ve created something really special to help you celebrate Christmas in style! A gingerbread cake topped with whipped coconut cream and decorated with gingerbread Christmas trees and stars. A really simple and easy to follow recipe that looks super festive and so impressive! A lot of people put so much time and effort into making the Christmas dinner that dessert often gets neglected. I know you can easily buy [...]

Homemade Jammie Dodgers (Vegan & Gluten-free)

Homemade Jammie Dodgers (Vegan & Gluten-free) One of my favourite indulgent treats is Jammie Dodgers! If you don't live in the UK you may have never heard of these fun titled biscuits (also known as cookies in other parts of the world!). They're a popular British treat made up of two shortbread biscuits with a layer of strawberry jam sandwiched in between.  I really do love their name. They sound so mischievous and naughty. If cookies got together, Jammie Dodgers would be the ones that want to cause havoc and mayhem, but in reality when you see them, they look the absolute opposite of that. They're so cute and innocent with a heart cut out in the middle, a sweet fruity centre and [...]
