Freekeh is a green wheat popular in Middle Eastern cuisine that’s harvested when the grain is still young. Unlike the ‘adult’ version of the wheat, Freekeh contains more protein, minerals and fibre. It contains three times as much fibre as brown rice. Why does this make it special? Well a high fibre content means it’s digested slowly and has a low GI number. A low GI means it doesn’t cause the blood sugar to spike the way rice would. It also means it will make you feel fuller so you don’t end up overeating.
One of the main things I like about granola is its convenience. You can make a big batch, store it in an air tight container and know you have breakfast sorted for the next few weeks. Very handy for days when you need a quick breakfast or snack.
Last year I made a healthier version of my favourite cookies – Kleicha (كليجة) which are Iraqi date cookies that are traditionally served on Eid (A religious holiday to celebrate the end of the month of Ramadan where muslims fast from sun rise to sun set for a whole month). Even though I loved the version I made last year, I wanted to outdo myself by making an even better and healthier version!

I usually start feeling peckish 2-3 hours after breakfast and need to have something between breakfast and lunch to keep me going otherwise I start feeling a little irritable. When I say ‘a little’ I actually mean ‘very!’.
