Greek Tomato Fritters (Tomatokeftedes)

These Greek tomato fritters aka Tomatokeftedes are probably one of the best vegetable fritters I've had! They're so simple to make, yet packed with so much flavour. They make a great appetiser or snack and they also happen to be vegan/dairy-free. We visited Santorini last year for my partner's birthday and it was hands down my favourite city I've travelled to so far. The weather was beautiful, the people were friendly and the food was delicious.  Out of everything we ate, the Tomatokeftedes were by far my favourite (their courgette fritters aka Kolokithokeftedes were a close second!). I love any and all fritters, epsecially vegetable packed ones. They're such an easy way to elevate vegetables. You can turn any old [...]

Pistachio Overnight Oats

These pistachio overnight oats are my current favourite breakfast. Creamy blended overnight oats flavoured with pistachio & packed with 29g protein & 8g fibre per serving! Topped with pistachios and pomegranate for some crunch + extra goodness.  In the world of breakfast options, overnight oats have gained immense popularity for their convenience as well as health benefits. To top it off, there are endless flavour combinations to experiment with so you never get bored. I feel like I'm having a new breakfast every single day. Packed with flavour, texture, plus a host of health benefits, these oats are a great way to kickstart your day. Overnight oats are generally known for their nutritional value - this pistachio overnight oats recipe [...]

Iraqi Lentil Soup (Vegan)

Super easy and nourishing soup that's ready in 30 minutes. This Iraqi lentil soup only calls for a handful of ingredients and there's no blending required (less washing up!). It's also fairly high in protein and fibre.   I feel like Iraqi food (and Middle Eastern food in general) doesn't get anywhere near the attention it deserves. I know I'm biased when saying this (because I grew up eating it), but Middle Eastern food is the tastiest, most delicious cuisine ever! It can also be fairly healthy with lots of colourful veggies, protein, spices and fresh herbs.  As you can imagine for a hot country like Iraq, soups weren't the most popular thing to eat. This is the one and only [...]

Spiced Date Walnut Rolls

These spiced date walnut rolls make a great quick and easy dessert to enjoy as a snack, healthier dessert or sweet treat to serve to guests. I've been making them on repeat recently, and I don't see that changing anytime soon. A lovely mixture of sweet/fudgy dates and crunchy/nutty walnuts. I made these date & pistachio rolls last year - they went viral! I have to admit that out of all the recipes I put together last year, they were by far my favourite creation. I would even go as far as saying they're probably one of my favourite treats that I've ever made. Although a very simple recipe, the combination of the fudginess from the date + the crunchy, [...]

2-Ingredient Turkish Fig Pudding

A simple pudding made with only figs and milk. I came across this 2-ingredient Turkish fig pudding and just had to give it a try. All I need to say is that it didn't disappoint!  As someone who grew up eating dried figs, this 2-ingredient Turkish fig pudding was right up my street. Like dates, figs (especially dried figs) are a staple in Middle Eastern cuisine. Growing up in Iraq meant they were a big part of my diet. We couldn't afford sweets often, so for us, figs were a readily available and cheap sweet treat that we looked forward to.  For some reason, my palette doesn't seem to appreciate the taste, but mainly the texture, of fresh figs. Dried [...]

Gingerbread Sticky Fig Puddings

These gingerbread sticky fig puddings are a play on the classic sticky toffee pudding, but made with figs instead of dates and other wholesome ingredients like oats and tahini. I also added gingerbread spices to make them more warming, satisfying and festive!  I posted these sticky toffee puddings on my Instagram page a few months ago and you guys seemed to love them! I had so much great feedback from everyone who tried them. I thought why not make another variation, but this time using figs instead of dates.  I think dried figs don't get the love they deserve, which is a shame because they're such an amazing ingredient to use. Especially when making healthier, naturally sweet desserts and bakes. Desserts [...]

Christmas Tree Protein Brownies

A festive treat with a healthy twist - these Christmas tree protein brownies are the perfect healthier treat if you're looking for something tasty, but not overly indulgent. They're no-bake, easy to make and taste so good!  There's no doubt that Christmas is a time of indulgence. There are so many treats around everywhere you go. It's always a challenge to eat healthy with so many temptations around.  Of course there's absolutely nothing wrong in indulging, I would never encourage abstaining from yummy food, especially during a period when many of us socialise with family, friends and work colleagues. However, some of us (myself included) find that the indulging often starts early December and doesn't end until early January. That's [...]

Vegan Orange Chocolate Truffles

These vegan orange chocolate truffles are super creamy and easy to put together. They make a lovely light post-Christmas dinner treat! Christmas desserts don't need to be complicated and time consuming to be impressive. These truffles are extremely easy to make and guaranteed to impress anyone. Especially those with a sweet tooth and a weakness for chocolate.  Anything orange + chocolate reminds me of Christmas. Although I'm not one to restrict myself from enjoying that flavour combination the rest of the year. Chocolate truffles are amazing as is, but with a hint of orange they just taste so much more moreish, don't you agree? The combination of cashews, milk, melted dark chocolate and coconut oil creates the perfect texture for [...]

Pomegranate Molasses Roasted Brussels Sprouts

An easy Brussels Sprouts recipe to make this festive season - these pomegranate molasses roasted brussels sprouts are packed with flavours, texture and served on a smooth cream cheese base. Super easy to make and guaranteed to be a crowed pleaser.  Some of you may already know this, but I'm half English, half Middle Eastern. I've spent most of my life feeling out of place, like I don't belong. The first 17 years of my life I spent growing up in Baghdad, Iraq. I was one of the very few people I knew or had even heard of from mixed backgrounds. Out of my WHOLE school, there were only 2 other mixed girls.  Iraq is a very traditional country with [...]

5-Ingredient Vegan Gingerbread Fudge

A simple no-bake and no-cook fudge made using healthier ingredients. These 5-ingredient vegan gingerbread fudge make for a lovely lighter treat to enjoy during the festive season, but also make a wonderful edible gift idea!    I made these chocolate dipped fudge squares last Christmas to take with me when I visited family members. I used one of my favourite ever recipes, this simple fudge recipe, but I gave it a festive twist by adding cinnamon, ginger and allspice.  They're perfect if you need a quick and easy treat to gift to loved ones or a lighter dessert to enjoy on the big day.  I know this is not your typical fudge recipe and I have had people asking why [...]
