Healthy Grain-free Granola Recipe

This healthy grain-free granola recipe is one that I've been making on repeat recently. It's super crunchy and keeps well, making it a great option to have on hand for a speedy breakfast, healthy snack or a crunchy addition to elevate meals.  Granola is something that you can easily make at home with one bowl, no equipment (apart from an oven, which most people have access to) and very little time. You can make it so much healthier than most shop bought granolas and at a fraction of the price. It's so adaptable - you can change the ingredients around according to your likes, or use what you have available in your cupboard to save you a shopping trip. Usually [...]

Mocha Buckwheat Pudding (Vegan | GF | High Protein)

Delicious, super smooth and chocolaty - this mocha buckwheat pudding can be enjoyed for breakfast, as a snack or a healthy dessert! Breakfast is my most favourite meal of the day by far! I've said it before and I'll say it again, if I could I would eat breakfast foods for breakfast, lunch AND dinner. I wake up looking forward to it, so I wanted to share with you my current favourite breakfast that's easy to make, balanced and tastes so good. A lot of people seem to struggle with breakfast ideas, especially breakfasts that are healthy with good amounts of protein, fibre and healthy fats. I recently rediscovered buckwheat pudding, which I hadn't had since making this blueberry buckwheat pudding. It's [...]

Vegan Chocolate Salted Caramel Protein Bars

A yummy post-workout snack that tastes like a dessert! These vegan chocolate salted caramel protein bars are no-bake and really easy to put together. Sometimes I love to snack on protein bars instead of a dessert to try to bump up my protein intake in between meals. Especially on days where I haven’t been able to prepare/eat well rounded meals (which is usually the case for lunch) and feel my protein intake has been on the low side. I used to regularly stock up vegan protein bars to have in my cupboard to snack on when I'm running around, but they can be really expensive. It made sense for me to make my own at home considering how easy they [...]

4-Ingredient Almond Butter Cookies

These 4-ingredient almond butter cookies are not only easy to make, but are also nutritious and taste so good! A great snack to have in your fridge or a healthier dessert to enjoy after meals.  Recipes don't come easier than this - a cookie recipe using only 4 ingredients and requires no baking. What makes them even better is they're healthy! Using only almond butter, oats a little bit of maple syrup to sweeten. I can't seem to stop creating super simple and quick treats. It has definitely become my thing now, especially since lockdown. Simple comforts with few, easy to find ingredients that don't leave you with a lot of washing up behind. I was looking through my recipe [...]

Courgette Tofu Fritters (High Protein)

These courgette tofu fritters make a great speedy dinner option, lunch or high protein snack. I usually serve them with roasted vegetables and a side of hummus (for even more protein and plant goodness!). I'm always looking for new, tasty and fun ways to use tofu. It's such a great plant-based protein option and can easily be flavoured with anything you like. It usually gets a bad rep for being boring, but when using the right flavourings (things like spices, garlic, fresh herbs, etc.) and enough of them, you can turn it into so many tasty and nutritious dishes.  Tofu is a complete protein source, meaning it contains all nine essential amino acids that the body cannot produce on its [...]

Healthier Fig Rolls (Vegan & GF)

These healthier fig rolls are my current favourite afternoon treat to accompany my cup of tea! They're so easy to make and only call for 7 ingredients. They also happen to be vegan, glute-free and dairy-free.  I started testing a fig roll recipe a couple of years ago and dabbled with it again here and there, but never really finalised a recipe I was happy with. A couple of months ago I had a mad craving for fig rolls, so decided to revisit the recipe and test it a couple more times. I'm now finally happy with a recipe that tastes amazing, but is made with healthier ingredients making it better for you than shop bought fig rolls. I also [...]

2-Ingredient Chocolate Macaroons

These 2-ingredient chocolate macaroons are so easy, I can barley call it a recipe. As the title suggests, you'll only need two ingredients that you've probably already guessed...yep, just dark chocolate and desiccated coconut! I've always been a fan of super simple and speedy recipes, especially when it comes to desserts. I think most of us struggle to find time to put a meal together, let alone a sweet treat, especially considering how easy it is to pick them up ready made from the supermarket. I don't know about you, but the last thing I want to do most days is spend an hour in the kitchen whipping up a dessert after spending so much time cooking and cleaning up [...]

Raspberry Protein Chia Pudding

This recipe is in celebration of Barbie Day and the release of the new Barbie movie! This raspberry protein chia pudding is what I imagine barbie would eat for breakfast in real life - pink, tasty and nutritious!  I was obsessed with barbies when I was young, but we couldn't afford toys growing up in Iraq. At the time she was THE toy that every little girl wanted. What made things worse is that my cousin not only had a few barbies, she also had a massive barbie house! I was SO jealous of her. Her dad was doing well financially, so he found ways to find luxuries like a barbie house, even in post gulf war Iraq when most [...]

Middle Eastern Tofu Kebabs (Vegan & Gluten-free)

These Middle Eastern tofu kebabs are my new favourite quick and easy week day dinner. They're ready in no time and you can enjoy leftovers as a nutritious and protein packed snack!  Tofu, made from soybeans, is a popular plant-based protein source and has several health benefits. It’s my favourite source of plant-protein. Half a regular block (around 140g) offers over 22g protein! Which is an easy way to bump up the protein content in a meal without having to try hard. It contains all essential amino acids needed by the body. Tofu is also nutrient-rich – it’s a great source for things like calcium, iron, magnesium, phosphorus, potassium, and vitamins like vitamin K and folate. It is also low [...]

Protein Peanut Butter (3-Ingredients)

You only need 3 ingredients to make this super speedy protein peanut butter recipe. All you need to do is blend everything together and enjoy! Spread on a slice of bread for a high protein breakfast or a post workout snack.  I always start my day with a high protein breakfast containing at least 20g of protein. I find it keeps me fuller for longer, stops me from feeling jittery after a couple of hours and gives me more energy. I also find when I eat a higher protein breakfast I don't get cravings later on in the day. Something that I've noticed over the years is that having a carby breakfast with little protein and fat is a big [...]
