It hit me recently that I’ve never used dried apricots in any of my creations before. I used to eat dried apricots a lot when I went through my fad diet phase. I was a big yo-yo dieter before I studied nutrition and improved my relationship with food and my body. I remember one of the big things at the time was to snack on dried apricots instead of sweets/desserts to help kerb sweet cravings and lose weight. I used to restrict my diet so much and wouldn’t allow myself anything considered to be a ‘treats’ when I was on one of my calorie restricting diets.

Once I moved away from that diet culture mentality, I think a part of me still associated dried apricots with diets and that time in my life when I saw food as my enemy. That’s all changed now that I’ve rediscovered my love for them, especially in the form of these 3-ingredient apricot coconut balls.

3-Ingredient Apricot Coconut Balls

What you need to make these 3-ingredient apricot coconut balls:

Dried apricots – dried apricots are high in dietary fibre, as well as a great source of vitamins and minerals, including vitamin A, vitamin E, potassium, and iron. They’re also antioxidant power houses packed with antioxidants such as beta-carotene, and flavonoids. They’re naturally sweet, making them great to use in healthier desserts. Fresh apricots won’t work for this recipe. 

Desiccated coconut – coconut contains healthy fats, predominantly in the form of medium-chain triglycerides (MCTs). MCTs are easily absorbed by the body and can be quickly converted into energy. It’s also a great source of vitamins, minerals, and fibre.

Orange zest – I love adding a hint of orange to these 3-ingredient apricot coconut balls. I feel the flavour complements the sweetness of the apricots and creaminess of the coconut so well. You can omit if you prefer not to use. It won’t affect the texture. 

How to make these 3-ingredient apricot coconut balls:

  • Add everything to a food processor and blend until you have a smooth mixture.
  • Divide and shape into 11-12 equal balls, then dip in more desiccated coconut.
  • Chill in the fridge for at least 30 minutes before serving.

Best stored in an air-tight container in the fridge. Keeps in the fridge for up to 1 week. You can also freeze them for up to 3 months.

  • Zest of 1 orange
  • 1 tbsp water or orange juice
