Vegan Raspberry Bounty Bars

Vegan Raspberry Bounty Bars Since so many of you loved my Blueberry Bounty Bars I thought I would create another variation and shoot a video this time to show you just how easy they are to make at home!  If you've never heard of bounty bars, they're basically a sweet coconut bar covered with a lush chocolate shell. I believe there is something similar in the US but under the name of 'Almond Joy'? Please correct me if I'm wrong, but I have seen many American bloggers making these Almond Joy bars and they seem very similar to Bounty bars minus the almond!  Bounty bars don't come in any other flavour apart from plain old coconut. Again please correct me if I'm [...]

Vegan Gluten-free Cinnamon Rolls

Vegan Gluten-free Cinnamon Rolls Who could resist a good cinnamon roll? Not me!  The first time I tried a cinnamon roll was when I visited Sweden with the hubby to stay with the in-laws. I couldn't believe something so delicious excited! So fluffy, sweet and packed with cinnamon - my favourite spice (actually it's a tie between cinnamon and cardamom) :P  I know you can get cinnamon rolls here in the UK, but the ones I've tried from supermarkets are usually made with puff pastry, which is nothing like the one I tried in Sweden. Also, most recipes seem to include a sugar icing on top which I feel ruins the flavour a little. The sweetness is so overpowering that it's more difficult to [...]

Vegan BBQ ‘Shroom Buns Recipe

Food Love Stories, brought to you by Tesco "Plant-based cooking is about celebration" the opening line in this video that Chef Derek created for Tesco Food Love Stories really resonates with me and I completely agree with his philosophy. For me, using fruit, vegetables, legumes, beans, pulses, nuts, seeds and whole grains is all about experimenting and creating delicious foods that are colourful, delicious and healthy.  Whenever I tell people that I eat a mainly plant-based diet and very little animal products, I'm immediately met with words of astonishment and more than often a look of concern. "Really?? So what do you eat then?" is something I hear a lot.  Take out dairy, eggs and meat and you're left with an endless list [...]

Vegan Chocolate Hot Cross Bun Ice Cream Sandwiches

Vegan Chocolate Hot Cross Bun Ice Cream Sandwiches  This truly is the ultimate Easter weekend treat. Vegan chocolate hot cross buns served with vegan ice cream instead of plain butter, because if you're going to do it, you might as well go all out! They're really easy to make (watch video at the top of the page) and so much tastier than shop bought hot cross buns with less sugar and completely plant-based. To make them even more decadent I had to add in some Love Cocoa 70% Ecuador dairy-free organic chocolate. Let's be honest, every treat tastes better with chocolate, well almost every treat. When I think a dessert will taste better with chocolate, I'm the first to add it in! It's [...]

Maple Pancakes – Vegan & Gluten-free

Maple Pancakes - Vegan & Gluten-free I've made a few variations of a 'basic' pancakes recipe before (like my strawberry choc chip pancakes and English pancakes), but this recipe by far is the easiest! Pancakes shouldn't be complicated and they definitely don't need loads of ingredients and additions to make them taste good! With pancake day around the corner, blogs and social media is saturated with pancake recipes. I wanted to post a recipe that's easy to make, requires very few ingredients and is both vegan and gluten-free. Many of the recipes I've seen are either gluten-free or vegan, but rarely tick both boxes. That's not ideal for someone like me who wants to avoid both irritants to keep [...]

Vegan Blueberry Bounty Bars

Vegan Blueberry Bounty Bars I'm really enjoying coming up with healthier vegan and gluten-free alternatives to some of my favourite treats and chocolate bars. I've already made my own healthified versions of Twix bars and Snickers and naturally I had to move on to creating a healthier version of bounty bars next! Bounty bars are up there as one of my all time favourite chocolate bars. As you may be able to tell by now, I don't actually just have one favourite - I have many favourites that I like equally.  The original bounty offers nothing in terms of nutrition. My version is higher in fibre and minerals like copper, iron, magnesium, zinc and manganese. And even though I used maple syrup to sweeten they're still [...]
