Homemade Jammie Dodgers (Vegan & Gluten-free)
One of my favourite indulgent treats is Jammie Dodgers! If you don’t live in the UK you may have never heard of these fun titled biscuits (also known as cookies in other parts of the world!). They’re a popular British treat made up of two shortbread biscuits with a layer of strawberry jam sandwiched in between.
I really do love their name. They sound so mischievous and naughty. If cookies got together, Jammie Dodgers would be the ones that want to cause havoc and mayhem, but in reality when you see them, they look the absolute opposite of that. They’re so cute and innocent with a heart cut out in the middle, a sweet fruity centre and a crumbly soft exterior.
What I also like about Jammie Dodgers is that they’re just the right amount of sweet. The jam centre has a slight tartness that balances out the sweet biscuit. You all know how much I’m into my sweet treats, but I can’t stand anything sickly sweet. That’s often the case with some biscuits/cookies, but not these.
I wanted to create my own version. A version without dairy, eggs or gluten. A version that people with allergies and intolerances can enjoy. Just because you can’t eat certain ingredients doesn’t mean you have to miss out on yummy treats like Jammie Dodgers!
This is the main reason why I like to come up with healthified, vegan and gluten-free alternatives to popular treats. I’ve already checked off things like Twix, Snickers, Jaffa Cakes, Wagon Wheels, Bounty Bars and Oreos from my list of popular/classic treats. I now can finally add Jammie Dodgers to that list!
I used these cookie cutters to get the traditional Jammie Dodger shape, but you can use any round cookie cutters
Homemade Jammie Dodgers (Vegan & Gluten-free)
Makes: 10
Ingredients:
1/2 cup (85g) plain gluten-free flour
1/4 cup (25g) ground almonds
1/2 tsp baking powder
1/8 tsp salt
2 tbsp coconut sugar or brown sugar
1 tbsp maple syrup
2.5 tbsp coconut oil, melted
1.5 tbsp milk of choice
1/4 tsp vanilla paste or extract
For the jam filling
Sugar-free jam or homemade chia jam
Method
Preheat your oven to 180°C (160°C fan assisted)/ 350°F
In a bowl, mix together the flour, ground almonds, sugar, baking powder and salt.
Pour in the coconut oil, milk, maple syrup and vanilla paste. Mix to form a dough.
Roll out the dough on a well floured surface, then using a Jammie Dodger cookie cutter*, cut out the cookies and arrange on a baking sheet lined with parchment paper.
Bake for 10-12 minute, then leave to cool completely.
You can either fill your cookies with a layer of sugar-free strawberry jam or my homemade chia jam.

المكونات
١/٢ كوب (٨٥ غرام) دقيق خالي من الغلوتين
١/٤ كوب (٢٥ جرام) لوز مطحون
١/٢ ملعقة صغيرة بيكنك بودر
رشة ملح صغيرة
٢ ملعقة كبيرة سكر جوز الهند أو سكر أبيض/بني
١ ملعقة كبيرة شراب القيقب او عسل
ملعقتين و نصف كبيرة زيت جوز الهند، مذابة
١ ملعقة و نصف كبيرة حليب نباتي
١/٤ملعقة صغيرةفانيلا
تعليمات
سخن الفرن ١٨٠ درجة مئوية
في وعاء، اخلط الطحين، اللوز، السكر، البيكنك بودر والملح.
صب زيت جوز الهند، الحليب، شراب القيقب ومعجون الفانيليا. امزج لتشكيل العجين.
استخدم قطاعات البسكوت المدورة لتشكيل البسكت
ادخل في الفرن لمدة ١٠–١٢ دقيقة، ثم اترك لتبرد تماما.
انشر طبقة من مربى الشيا الفراولة او التوت (الوصفة تحت)
مربى الشيا
٣٥٠ غرام فراولة او توت اَي نوع. طازج او مجمد
٣ ملعقة كبيرة ستيفيا او اي محلي (سكر ابيض، عسل الخ)
٤ ملعقة كبيرة بذور شيا
١ ملعقة كبيرة عصير الليمون
تعليمات
ضع الفراولة مع المحلي و الليمون في وعاء صغير على نار متوسطة. سخن لبضع دقائق.
اهرس الفراولة إلى ان تحصل على صلصة
ازل الوعاء عن النار و ضف بذور الشيا
اتركه ليبرد ثم انقل للثلاجة لمدة ساعة أو ساعتين الى ان يثخن
