Butternut Squash Kale Quinoa

I'm always making quinoa, but I rarely make it plain. I always add things like beans, nuts and lot of vegetables. It's so easy and quick to make so it's perfect for when you're in a hurry and need something quick. I like to make a huge batch and store it in the fridge to have for lunch throughout the week. It makes an amazing lunch on the go - better than your average sandwich and definitely much healthier, and more interesting (in my opinion!).

Mixed Berry Chia Pudding

This recipe is as easy as they get! You literally only need 3 main ingredients and then you can add whatever else you like. Chia seeds have very quickly become one of my pantry staples that I can't live without! I've been using them particularly in baking as a substitute for eggs, especially when I'm looking for something denser and less spongy. I think chia eggs work so much better than flax eggs, does anyone else think that?

Sweet Potato Gnocchi with Red Pesto

You know sometimes when you come across a recipe and straight away you think "This looks too difficult" and you move on before actually reading the recipe and knowing what goes into it, well for me, homemade gnocchi was one of those recipes! I'd seen a few people making homemade sweet potato gnocchi but I've always thought there is no way this is not going to be fiddly! Now I realise how completely wrong I was!

Healthy Vegan Brownies

Brownies are probably one of my favourite desserts. Dense, rich, sweet and most importantly full of chocolatey goodness! What's not to love?! I don't think I've ever come across anyone who doesn't love brownies. However, they do tend to leave a heavy feeling in my stomach. Not surprising when you consider the mountain of sugar and fat that's added to a typical brownie recipe.
