Date Caramels Recipe

Easy to make, chewy and naturally sweet - this date caramels recipe is made using fudgy dates and creamy tahini. Unlike traditional caramels, which are usually made by cooking sugar, butter, and cream until they caramelise, these date caramels rely on the natural sweetness of dates as well as the richness of tahini to achieve a similar, though healthier, result.    I'm revisiting old recipes on my blog that I've completely forgotten about. This date caramels recipe is based on these chocolate covered salted caramel 'fudge' that I shared back in 2018 (how was that 6 years ago?!). I make a lot of very easy, very few ingredient recipes, but this is easily one of the simplest I've ever created. [...]

Date Recipes

Looking for some easy date recipes that are healthier and easy to make? Then you're in the right place! I've always been a massive fan of using dates in desserts. I grew up in the Middle East where dates are a staple in every household. I ate them almost everyday without fail, not that you'd ever hear me complain about it - I'm obsessed with them! They have the most delicious sweet, caramel like taste and fudgy texture that work so well in dessert.  Desserts are often synonymous with indulgence and decadence, but what if you could satisfy your sweet tooth while also nourishing your body? Enter dates - the naturally sweet, versatile fruit that has been used for centuries [...]

Scrambled Oats Recipe

If you're bored of your morning bowl of porridge or plate of scrambled eggs, why not mix the two together and try making this scrambled oats recipe. You get the best of both worlds - the taste of your sweet bowl of porridge oats with the texture of scrambled eggs. A hearty and satisfying breakfast that's ready in minutes. I only recently came across the concept of "Scrambled oats". It's a creative twist on traditional oatmeal/porridge, blending the consistency of scrambled eggs with the hearty texture of oats. It's a dish where oats are cooked in a way that makes them resemble scrambled eggs in texture. Why I love making this scrambled oats recipe: I'm usually a sweet breakfast kind [...]

Tabbouleh Salad Recipe (Tabouli)

This Tabbouleh salad recipe is my take on one of the most famous and iconic Middle Eastern Salads out there. You'll almost certainly find Tabbouleh on the menu of every single Middle Eastern restaurant. It's famous for it's simplicity and freshness - a salad that everyone needs to try!  What is Tabbouleh? Tabbouleh is a traditional Middle Eastern salad made primarily of finely chopped parsley, tomatoes, mint, onion, and soaked bulgur wheat. It is typically seasoned with olive oil, lemon juice, salt, and pepper. Originating from the Levant region, abbouleh is a staple in Lebanese and Syrian cuisines, as well as many other Arab countries, like in Iraq where I grew up. It's often served as part of a mezze [...]

Dark Chocolate Bounty Bars

These dark chocolate bounty bars are made with only 5 ingredients and are so easy to put together. They're more wholesome than the real thing and also happen to be vegan/dairy-free. If you live in the UK, you'll know the running joke that every Christmas when a box of celebrations chocolates go around the room, all the bounty's are left behind because no one wants them. I could never relate, because for me, I would always reach out for the bounty bars first! My partner is the same, so they can't be that unpopular. They taste more sophisticated and have so much more flavour that some of the other chocolates in the tin. I think most people like them, but they [...]

Healthier Mahalabia Recipe (Muhallebi)

This healthier Mahalabia recipe is my lighter take on a classic Middle Eastern dessert popular during Ramadan and Eid. I've sweetened it with whole dates - a great source of fibre, as well as added tahini for healthy fats and flavour. Mahalabia, also known as Muhallebi, is a traditional Middle Eastern dessert that originated in ancient Arab cuisine. It is a creamy pudding-like dessert made primarily from milk, sugar, and cornflour (or rice flour), flavored with rose water or orange blossom water, and garnished with pistachios and rose petals. It's served chilled and can be found in various Middle Eastern countries under different names and variations. Mahalabia is known for its smooth texture and delicate flavour, making it a popular [...]

Healthy No-Bake Brownies

These healthy no-bake brownies are a must-try. You only need a handful of easy to find ingredients and there's no baking required. They're also a great source of fibre (from the oats), healthy fats (from the tahini) and antioxidants (from the cocoa/dark chocolate). They taste decadent whilst being good for you - that's the kind of dessert I want more of in my life! One of my most popular recipes on my blog are these no-bake chocolate covered brownies. I get why they're so loved - they're easy, tasty and fool-proof, so anyone can make them. They're also just as decadent and satisfying as a regular brownie (I think so anyway!), but made with healthier ingredients like dates, tahini, cocoa [...]

Chocolate Cottage Cheese Pudding (High Protein/Healthy)

This chocolate cottage cheese pudding makes a tasty make-ahead-of-time breakfast option or even a healthy dessert! Packed with 42g protein per serving and you only need 6 ingredients to make it!  I'm new to the cottage cheese game. For a very long time I avoided eating dairy all together since I linked it to my IBS and eczema flare-ups. I started reintroducing it back into my diet last year and to my surprise I haven't had any negative side affects. Looking back I wonder whether I ever had an adverse reaction to dairy.  I now know my IBS is usually triggered by things like stress and lack of sleep, rather than any one ingredient I consume in isolation. I also [...]

Moroccan Zaalouk Recipe (Aubergine Salad)

This Moroccan Zaalouk recipe makes a great appetiser, side or snack! With a rich, tangy and smokey flavour, I also love serving it with plain vegetables or rice to add a lot of flavour as well as extra nutrients and antioxidants!  Zaalouk is a traditional Moroccan dish made primarily from eggplant and tomatoes, flavoured with garlic, olive oil, and various spices such as cumin, paprika, and chili pepper. It's typically served as a side dish or salad and is often enjoyed with bread. Zaalouk can vary slightly in preparation and ingredients depending on the region or personal preferences, but it's generally known for its rich and savoury flavours. It's a popular vegetarian dish in Moroccan cuisine. I love food, all [...]
