I keep going through phases when it comes to what breakfast I crave in the morning. Sometimes I’ll have smoothies every single day for two weeks straight, other times you’ll find me warming myself up with cosy bowls of porridge, but right now it’s all about the buckwheat pudding! 

I have shared a buckwheat ‘porridge’ recipe a couple of years ago (find recipe here), but then all of a sudden I stopped making it. I haven’t added buckwheat groats to my shopping list in like forever and I think that’s why I fell out of making them, but now buckwheat puddings are back baby and they’re here to stay! 

If you like thick smoothies, you’ll love buckwheat puddings! It’s basically buckwheat groats soaked overnight and blended with things like fruit and milk. What I love most about it is its texture. So smooth, creamy and satisfying. It’s also super healthy and filling. Great way to start the day or you can even enjoy it as a yummy and filling snack.

I like to add banana to my buckwheat to add natural sweetness and almond butter for richness and healthy fats. In this recipe, I also added in some blueberries for an early morning antioxidant dose and protein powder to make it even more filling and satisfying. 

The protein powder I’m using is from Vivo Life. I’ve used their protein powder before to make my salted caramel protein ice cream doughnuts, but this time I’m giving their perform Acai & blueberry protein powder a try. It was just the perfect addition to this blueberry buckwheat pudding recipe. It added more sweetness and a beautiful berry flavour without increasing the sugar content. 

I really like Vivo protein powders. They’re completely plant-based made with a mixture of hemp and pea protein and they’re sweetened with stevia. It also contains turmeric to help with recovery and dried freeze blueberries and acai berries as a source of antioxidants. 

I usually find flavoured protein powders quite strong and they usually overpower recipes. More often than not they also taste artificial, but so far both Vivo’s protein powders that I’ve tried taste amazing!

You can prepare this blueberry protein buckwheat pudding the night before to have it ready waiting for you in the fridge the following morning. Convenient, delicious and healthy 😀 


Blueberry Protein Buckwheat Pudding

Serves: 2

Ingredients:

1/2 cup buckwheat groats, soaked overnight in water
1/2 cup milk of choice – I used unsweetened oat milk
1 ripe banana
1 cup blueberries – fresh or frozen
1 scoop Vivo Life acai & blueberry protein powder
1 tbsp almond butter
Optional toppings – coconut yoghurt and more blueberries

Method

Drain and rinse the buckwheat groats and add them to your blender/food processor along with the rest of the ingredients. Blend until smooth.
You can eat it straight away, or I would recommend chilling it in the fridge for a couple of hours.
