Quick and easy 5-ingredient no-churn ice cream that’s high in protein and tastes so delicious! This vegan protein chocolate ice cream would make an amazing healthier snack or dessert.

We’ve had so many lovely sunny warm days since lockdown began, which has been a blessing because I think everyone would have felt so much worse if the weather was constantly rainy and dreary. On a hot day all I can think about food wise is something cold and refreshing, usually ice cream of some sort. To satisfy my cravings I’ve been making this protein ice cream A LOT! It helps that it’s so easy to make and that it’s healthier than your regular shop bought ice cream.

Made using 5 basic ingredients – bananas, coconut milk, cocoa, protein powder and chopped chocolate or chocolate chips for some crunch. The sweetness comes from the banana and the protein powder, but you can add something like maple syrup if you would like it a little sweeter. I don’t like my desserts sickly sweet so this combination turned out perfect for me!

Vegan Protein Chocolate Ice Cream

Serves – 4

Ingredients

2 frozen rips bananas – chop and freeze overnight in a freezer bag
1 x (400ml) can full fat coconut milk
60g (1/2 cup) Garden of Life vanilla protein powder (Click here for 25% off Garden of Life products – Use the code NADIA25)
2 tbsp cocoa powder
20g dark chocolate, roughly chopped

Method

Refrigerate the can of coconut milk overnight to harden. Scoop out the top, hardened part of the coconut ‘cream’ making sure not to include any of the clear liquid.
Add the bananas and the coconut ‘cream’ to a blender and blend until smooth, then add in the protein powder and cocoa. Blend again to combine.
Transfer into a cake tin and top with the chopped chocolate.
Freeze for 30-60 minutes and enjoy!
