Whenever I mention xylitol, people say something along the lines of “it sounds too much like a chemical, so I think I’m going to stay away from it”. I don’t think you should dismiss an ingredient just because you don’t like the sound of it! The name xylitol comes from the Greek word ‘xyl’ meaning wood because it’s extracted from the bark of birch trees – it doesn’t get any more natural than that!
Before embarking on my healthy eating journey, I never thought to make my own homemade jam. It just seemed like too much of a faff and when you have endless options at the supermarket, why bother? But how amazing would it be to be able to make your own healthy homemade jam that’s sugar free, mostly fruit and takes only 5 minutes to make? Seems to good to be true, right?
I must admit I’m not the biggest fan of fruit pies, or cooked fruit desserts. I prefer eating my fruit raw and cold; however, rhubarb is one of those fruit (a vegetable, actually!) that you can’t eat any other way apart from cooked…so I thought why not give it a try. It’s so deliciously tart and not too sweet. In fact, I only used 2 tbsp sweetener in the filling and it was just right! Traditional recipes use anywhere between ½ and 1 cup of sugar for the filling alone!
It’s not often that I would feel OK about eating a muffin for breakfast. But these pumpkin chocolate chip muffins are so healthy that I CAN eat one for breakfast without feeling guilt or remorse. The only ‘not so good for you’ thing about them is the chocolate chips, but a little chocolate never hurt anyone 😛
Whenever it’s someone’s birthday I’m in a dilemma; do I attempt to make a healthy cake? What if the birthday boy or girl doesn’t like it? What if it doesn’t turn out the way I expect it to? Should I take the risk? All these questions go through my mind and most of the time they put me off trying to bake a healthy birthday cake.
I made these healthy gluten free caramel cookies while revising for my exam a couple of weeks ago. When I feel stressed, nothing is more soothing than going into the kitchen, taking my baking essentials out and whipping up some delicious wholesome goodies!
