I’m not going to argue that Christmas pudding is probably one of the perfect traditional post-Christmas dinner desserts; However, it does take hours to make yourself. Of course you always have the option of buying a ready made Christmas pudding which will most likely be full of sugars and additives. I’m not saying you shouldn’t indulge, but if you would prefer a healthier treat that you can make at home in less than 15 minutes, then I’ve got you covered.
Brownies are probably one of my favourite desserts. Dense, rich, sweet and most importantly full of chocolatey goodness! What’s not to love?! I don’t think I’ve ever come across anyone who doesn’t love brownies. However, they do tend to leave a heavy feeling in my stomach. Not surprising when you consider the mountain of sugar and fat that’s added to a typical brownie recipe.
Last week was actually warm enough for a frozen treat, looks like summer is finally here (even though it’s raining now as I’m writing this!!) I’ve really been craving some banana ice cream (nice cream, nana ice cream…or whatever you want to call it!) lately, which is basically frozen bananas blended into a thick ice cream like consistency. If you haven’t tried it, it’s definitely something you NEED to add to your ‘recipes to make’ list.
The secret ingredient in these blondies and what makes them healthy is – you’ve probably already guessed it – CHICKPEAS! Most of the healthy blondie recipes out there include some sort of nut butter. I wanted to create a nut free recipe for those of you allergic to nuts, and this is the result! Healthy, nut free, vegan, gluten free, dairy free and refined sugar free.
Here’s my healthier version of the traditional Hot Cross Bun using spelt flour instead of plain or wholemeal flour. The texture is somewhat different but that’s to be expected since I’m not using the typical ingredients that make a hot cross bun light and fluffy, but I like denser breads and cakes anyway so I’m absolutely thrilled with the results!
