Gluten-free Vegan Chickpea Calzone Bread, pastries and anything with a crust have always been favourite kind of meals. I could happily live on toast (spread with avocado, nut butter, jam…etc), sandwiches (with different fillings) or pizza in all forms! I’ve always had a love hate relationship with things like pies, pastries and pasties because to me, they’re some of the most delicious things …
How to Make Falafel – quick & easy plant-based chickpea patties that you can enjoy for lunch, dinner or even breakfast!
Avocado Courgette Spaghetti – a simple vegan/vegetarian dinner idea. High in healthy fats, fibre vitamins and minerals and is also gluten-free!
I once ordered a salmon dish when having a catch up with a friend and it was served with a mango salsa. I thought it was so delicious and the flavoures complemented each other so well. I thought the mango was quite a nice alternative to add to salsa. I decided I would soon recreate the dish, this was two years ago! I recently remembered it and suddenly had a strong urge to make it!
As some of you already know, I like keeping my recipes simple. To make this gluten free vegetarian spaghetti I’m making a simple tomato sauce using canned tomatoes and tomato puree and flavouring it with garlic, basil, chilli flakes and lemon jucie. I’m adding peas for some extra colour and texture but feel free to use minced meat or prawns for some protein.
You know sometimes when you come across a recipe and straight away you think “This looks too difficult” and you move on before actually reading the recipe and knowing what goes into it, well for me, homemade gnocchi was one of those recipes! I’d seen a few people making homemade sweet potato gnocchi but I’ve always thought there is no way this is not going to be fiddly! Now I realise how completely wrong I was!

When going out to restaurants, I wouldn’t even consider looking at the salad section of the menu. “How can a few leaves and some tomatoes fill you up? Salads are boring” I was so wrong!
Quick Prawn Coconut Curry This dish has become a dinner staple in my household. Whenever I’m stuck for meal ideas or want something quick and easy, I always turn to this quick prawn coconut curry. This is my version of a ‘curry in a hurry’ – It will only take 15-20 minutes for a lovely, warming curry that’s full of …
Traditional Shepard’s pie can often be on the fatty, starchy side what with all the meat, thick layer of potato mash mixed with generous amounts of butter and cheese. This healthy vegetarian Shepherd’s pie is much lighter and full of vegetables and pulses packed with nutrients and mineral, and the best thing about it is that it tastes just as delicious and satisfying as the traditional!
On most evening, I like making quick and simple recipes, like these healthy tuna patties. All you need to do is chop a few ingredients, mix everything in one bowl, shape into patties and shallow fry for a few minutes and you’ll have a tasty and satisfying meal. You can eat these tuna patties on their own with a side salad and sweet potato fried, or you can turn it into a burger with layers of tomato, lettuce, a slice of cheese and a drizzle of Sriracha…perfect!
