No-bake Vegan Protein Chocolate Cookies

You know how much I love quick and easy treats that take hardly any time to prepare and call for only a few ingredients. It makes it easier for me to eat healthier homemade foods, but also makes the recipe more accessible for others. I would like to think that most of my recipes are easy enough for anyone to follow even if you don’t have any experience in the kitchen. Especially knowing how busy life is these days and how little time we all have to be spending in the kitchen when we have a million and one other things on our to-do list! 

Another thing I like to make sure of is to make my treats as healthy as possible while still tasting delicious. Adding protein powder to desserts is a great way to bump up your protein intake, but also helps make the treat/dessert more balanced and less likely to give you blood sugar crash. Snacks higher in protein will also make you feel more full, sustained and content for longer meaning you’re less likely to want to snack on other treats later on. 

I’m one of those people who can’t go a day without having chocolate in some form or another. Even if it’s just a square or two of dark chocolate. Even better when it’s in dessert form that’s healthier for me than having other common go-to snacks like biscuits and crisps.

No-bake Vegan Protein Chocolate Cookies

Makes – 10-12

Ingredients

30g (1/4 cup) Garden of Life vanilla protein powder (Click here for 25% off Garden of Life products – Use the code NADIA25)
25g (1/4 cup) cocoa powder
Pinch of salt
130g (1/2 cup) almond butter (or you can use peanut butter)
2 tbsp maple

Method

Mix the protein powder, cocoa and salt in a large bowl, then add in the almond butter and maple syrup. Mix well to combine into a dough consistency.
Shape into balls and press down with a fork to create a criss-cross pattern.
Arrange on a baking sheet lined with parchment paper and refrigerate for 30 minutes to set.
Optional – you can drizzle some melted chocolate on top for extra yumminess! 
Store in an air-tight container for up to a week.
