Cauliflower & Chestnut Soup (Vegan & Gluten-free)

This cauliflower & chestnut soup is delicious & warming. Perfect to enjoy during the festive season or even as a starter on Christmas day. There's nothing more comforting than a warming bowl of soup on a freezing cold day. The past week has been so cold that I'm finding myself craving nothing but soup, tea and hot chocolate.  I don't know about you, but we still have another week before Christmas Day and I've already overindulged way too much. It's just too tempting not to want to try all the Christmas foods and treats that pop up in supermarkets shelves around this time of year. The cold weather isn't helping with my insatiable appetite either. I definitely notice I feel [...]

4-Ingredient Vegan Hazelnut Chocolate Truffles

These 4-ingredient vegan hazelnut chocolate truffles are so easy to make and taste divine! They contain no dairy or coconut milk. Perfect for chocolate hazelnut lovers and makes a great post-dinner treat. These truffles are inspired by the orange truffles I made this time last year for Christmas. Instead of using cashews, I used hazelnuts and omitted the orange zest for a simple hazelnut chocolate truffle version.  I feel like I've made a few hazelnut recipes recently, like this chocolate hazelnut granola and these hazelnut protein bars. I don't know what it is, I guess I just LOVE hazelnut and chocolate. To be fair, it is a match made in heaven, I don't think many would argue with that statement. [...]

4-Ingredient Pumpkin Cake

This 4-ingredient pumpkin cake is so easy to make, no-bake and so delicious! Each serving offers 15g protein! Makes a great post-workout treat, snack or healthier dessert.  I wasn't sure what to call this recipe and whether to refer to it as a 'cake' or a 'tart'. It's technically neither. Unlike a traditional cake, it's not baked in the oven and has no flour or eggs. Then again it doesn't have a tart base, so I guess I could refer to it as a 'crustless tart', but that would make the title too long and complicated.  When making protein desserts, most rules go out the window anyway, so I'm sticking to calling this recipe a cake. I know I'll get [...]

3-Ingredient Healthy Mousse

This 3-ingredient healthy mousse is made with only dark chocolate, water and orange zest. Healthy desserts don't come easier than this! Whipped up in the blender for an airy, light, yet decadent texture. This one's a must try!  I shared this 2-ingredient chocolate mousse a couple of months ago that went viral on my Instagram page. Why? My guesses are because it's easy, contains chocolate and only one other ingredient, water. I don't usually list water as an ingredient in any of my other recipes, so essentially it's a 1 ingredient recipe!  A few of you left me comments and messages suggesting I whip up the chocolate & water mixture before refrigerating to set. Of course I had to try [...]

Tahini Chocolate Crunch Bars

These tahini chocolate crunch bars have the perfect soft to crunchy ratio! A chocolate 'rice krispie' base, a smooth creamy centre and a layer of decadent dark chocolate on top. Oh and it's all vegan, gluten-free and no-bake. Dessert perfection! I've made these bars so many times in the last couple of years. They always make a really nice treat for when I have guests over. They also have every thing I love - tahini, chocolate and a satisfying crunch! Those 3 elements together are the definition of a good dessert as far as I'm concerned.  Although I'm using tahini in the recipe, I've also made these bars with sunflower seed butter and peanut butter. The recipe is so easily [...]

Healthier Sticky Toffee Pudding

A healthier sticky toffee pudding made with better-for-you-ingredients and made into individual portions for ease and a shorter baking time. They're just the right level of sweet and really easy to make.  Cold rainy weather calls for something warming, cosy and comforting. I think it's safe to say this healthier sticky toffee pudding ticks all those boxes! Serve warm with my three ingredient drizzle for the ultimate dessert to satisfy your sweet cravings this winter.  In case you're not already familiar with it, sticky toffee pudding is a classic British dessert that consists of a moist, dense sponge cake made with dates, covered in a rich toffee sauce. It's a popular and indulgent dessert known for its sweet and sticky [...]

Protein Mango Coconut Chia Pudding

A delicious breakfast that's packed with protein. This protein mango coconut chia pudding is great to prepare ahead of time for a fuss-free breakfast that you can also take with you on-the-go on busy mornings.  Chia pudding is such a versatile breakfast. You can customise it with various ingredients like fruits, nuts, seeds, spices, sweeteners, and flavourings to suit your taste preferences. The flavour combination possibilities are endless, meaning you can make a different variation every day without getting bored of it.  My current favourite flavour combination for breakfast is mango and coconut. Even though we'll shortly be heading into winter and the cold weather is slowly creeping in, I'm still craving cold, refreshing and vibrant breakfasts. If anything they [...]

4-Ingredient Sunflower Seed Chocolate Bites

If you're looking for an easy crunchy snack that's also good for you, try these 4-ingredient sunflower seed chocolate bites. All you need is sunflower seeds, maple syrup, salt and dark chocolate! These 4-ingredient sunflower seed chocolate bites were inspired by these crunchy nut & seed rounds that I made a few months ago. They went down a treat on Instagram, so I thought why not make an even simpler version without nuts (for those with nut allergies). I also dipped them in chocolate (because why not!), but of course you can omit for a lower calorie version.  Like many of my recipes, this recipe is flexible - you can use other seeds (like sesame or pumpkin seeds), or you [...]

Vegan Gluten-free Maamoul

These vegan gluten-free Maamoul are one of my favourite things to eat! This is my take on the traditional recipe with no added sugar and naturally sweetened only with whole dates. Packed with aromatic flavours like cardamom and cinnamon - if you've never tried Maamoul before, this is your sign to make them!  What is Maamoul? Maamoul is a traditional Middle Eastern dessert that is popular in many countries, including Lebanon, Syria, Jordan, Palestine, and other parts of the Middle East. It is typically enjoyed during festive occasions and holidays, especially during religious celebrations like Eid, Christmas and Easter. They're small, shortbread-like cookies/pastries that are often filled with sweet fillings, such as dates, nuts (typically walnuts, pistachios, or almonds), or [...]

Vegan Gluten-free Baked Chocolate Oats

A delicious breakfast that tastes like a dessert! This vegan gluten-free baked chocolate oats recipe is perfect to enjoy on a chilled cold weekend day. * This post is sponsored by FREEE* I'm a huge fan of oats for breakfast in general, but during the colder months, nothing beats a bowl of baked warm oats straight out of the oven!  Oats are a great source of fibre, vitamins (such as B vitamins), and minerals (like manganese, phosphorus, and magnesium). Baking them into a dish can help you make the most of these nutrients. They're also a complex carbohydrate, which means they release energy slowly + will help regulate your blood sugar levels. This will help to keep you full and [...]
