These blueberry oat bars are perfect to have in the fridge for super busy weeks. What you need to make these blueberry oat bars:
Oats – I used porridge oats, as they cook quicker in the oven and turn out less chewy. I also used oat flour, which is basically oats that I’ve ground up in a high-speed blender into a fine flour. Make sure you use gluten-free oats if you need the recipe to be gluten-free.
Blueberries – Packed with antioxidants and nutrients. Frozen blueberries are great because they’re cheaper, don’t go off and tend to be more nutritious since they’re frozen soon after being harvested. You can use fresh blueberries if you prefer, or another kind of berry like raspberries.
Sugar – We need some sort of sweetener to make these blueberry oat bars taste good and to enhance all the flavours. I used granulated white sugar, but brown sugar will also work. You can also use a sugar-free sweetener if you need a lower sugar/carb option.
Butter – You’ll need to add some kind of fat in the form or butter or a dairy-free alternative like a dairy-free spread or coconut oil. This will help bind the oat ingredients together since we’re not using any eggs/other forms of binder. It also adds a bit of richness to the oat base so it’s not dry and crumbly.
Cornflour – This will help the blueberry layer set while it bakes, creating almost a blueberry jelly like texture, which I love! Helps set the blueberry layer so it’s easier to slice into bars.
Lemon zest & juice – Because I think lemon and blueberry go so well together!
How to make these blueberry oat bars:

Preheat your oven to 180C/160C fan/350F.

Mix together the oat flour, oats, sugar, baking powder, lemon zest and salt in a large bowl. Fold in the butter and mix until you have a crumble consistency.

Transfer 3/4 of the mixture into an 9” square cake tin lined with parchment paper. Press down with your hands or a spoon to make sure the base is even.

Add the blueberries, sugar, cornflour, lemon juice and water to a saucepan. Mix and cook over a medium heat until the mixture starts to thicken a little.

Take off the heat and pour onto the base.

Sprinkle on top the remaining oat mixture and bake for 30-40 minutes.

Leave to cool completely before slicing. Enjoy!

Blueberry Oats Bars
Ingredients
For the oat crumble
- 160g porridge oats
- 130g oat flour* see notes
- 4 tbsp sugar** see notes
- 1 tsp baking powder
- 1/4 tsp salt
- 125g butter/dairy-free butter*** see notes
- Zest of 1 lemon
For the blueberry filling
- 350g g frozen blueberries
- 2 tbsp lemon juice
- 2 tbsp sugar
- 2 tbsp cornflour
- 1 tbsp water
Instructions
