Ingredients
 
 

  • 220g dried apricots
  • 65g desiccated coconut more for coating
  • Zest of 1 orange
  • 1 tbsp water or orange juice

Instructions
 

  • Add everything to a food processor and blend until you have a smooth mixture.
  • Divide and shape into 11-12 equal balls, then roll in more desiccated coconut.
  • Chill in the fridge for at least 30 minutes before serving.

Notes

Best stored in an air-tight container in the fridge. Keeps in the fridge for up to 1 week.
