Although I already have a basic vegan crepes recipe, my oat & spelt crepes, which is very similar to this recipe, I wanted to make a gluten-free version so my readers with a gluten allergy/sensitivity can also enjoy them. So I made a couple of tweaks to the original recipe and substituted the spelt flour for buckwheat flour. 

These gluten-free vegan crepes are so easy to make and only call for a handful of ingredients and are ready in no time! Perfect for a fun and chilled Saturday or Sunday morning to serve to friends and family. 

You can stack them, sprinkle with fruit and nuts, or fill them with nut butter or homemade Nutella and roll them.

Simple Gluten-free Vegan Crepes

Serves: 2

Ingredients:

1/4 cup gluten-free oat flour – or you can use normal rolled oats if you don’t have a problem with gluten
1/4 cup buckwheat flour
2 tbsp granulated stevia
2 tbsp coconut oil, melted
Pinch of salt
1/2 cup milk of choice

Method:

Mix together the oat flour, buckwheat flour, stevia and salt. Pour in the milk and oil and mix to combine.
Heat a lightly oiled frying pan on a medium/high heat. Make sure the pan is really hot before you start cooking the batter. Pout 1/4 cup of the batter to make one crepes. Swirl the pan around a little to spread the batter. Cook for a couple of minutes then flip and cook for another 1 minute on the other side.
Top with fruit, nuts, nut butter or maple syrup.
