As much as I love a homemade slice of cake, my partner doesn’t have much of a sweet tooth, so baking a whole cake for myself is never an option unless we have guests over. Even then, I usually pack up leftovers in containers for my guests to take home with them. If there’s cake in the house, I’ll want to eat it all! So I’d rather skip the constant temptation.
I do however fancy a humble slice of cake every now and then, so making a single serve version like this healthy peanut butter mug cake works best for me. There’s no waste and I know I won’t overindulge.

Healthier – I used an egg, peanut butter, oats and a little bit of maple syrup to sweeten, making this healthy peanut butter mug cake a good source of protein and healthy fats. There’s also less sugar compared to your average slice of cake. You can make it even lower in sugar by omitting the chocolate chips if you like.
Here are some simple adjustments you can make to your healthy peanut butter mug cake:
Flour – you can substitute the oat flour for plain, wholemeal or spelt flour. They will all work well.
Toppings – This healthy peanut butter mug cake tastes amazing without any toppings, but I usually liked to add some chocolate chips, because I’m a chocoholic and need my daily chocolate fix! If chocolate is not your thing, feel free to add other things like chopped nuts, dried fruit or even strawberry jam for a PB& J version.
Nut butters – You can use any nut butter you like, it doesn’t have to be peanut butter. Pistachio, hazelnut or almond butter will all work just as well.
What you’ll need to make this healthy peanut butter mug cake:
Egg – I’m using a whole egg to make the bulk of the cake. Eggs are packed with nutrients and protein making them great to snack on.
Peanut butter – This will add lots of healthy fats, flavour and make the cake lovely and moist. You can use another nut butter if you prefer.
Oats – I only used 1 tbsp of oat flour to give this healthy peanut butter mug cake structure. You can substitute it with another type of flour like plain, wholemeal or spelt flour.
Maple syrup – As with most desserts, you do need a bit of sweetener to make them taste good and this mug cake is no exception. You can use another liquid sweetener like honey or agave.
Chocolate chips – This is completely optional, but recommended, especially if you’re a chocoholic like me.
How to make this healthy peanut butter mug cake:

Lightly oil one large mug or 2 ramekin dishes.

Add the egg, peanut butter and maple syrup. Mix to form a batter, then fold in the flour, baking powder and salt.

Transfer into your mug or ramekins, then sprinkle a few optional chocolate chips on top.

Microwave on high for 1-2 minutes (the time will depend on the strength of your microwave. Mine is a 900W microwave, so I only microwaved it for 1 minute).

* You want to stop cooking your mug cake a little earlier than you think as it will continue to cook as it cools down. If you leave it in for too long, the cake will be dry.

Allow to cool slightly, then dig in!

Ingredients
- 1 egg
- 3 tbsp smooth peanut butter
- 2 tbsp maple syrup
- 1 tbsp oat flour
- 1/4 tsp baking powder
- Pinch of salt
- 1 tbsp dark chocolate chips optional
Instructions
- Lightly oil one large mug or 2 ramekin dishes.
- Add the egg, peanut butter and maple syrup directly into the mug, or in a mixing bowl. Mix to form a batter, then fold in the flour, baking powder and salt.
- If using a bowl, transfer into your mug or 2 ramekins, then sprinkle a few optional chocolate chips on top.
- Microwave on high for 1-2 minutes (the time will depend on the strength of your microwave. Mine is a 900W microwave, so I only microwaved it for 1 minute).
- * You want to stop cooking your mug cake a little earlier than you think as it will continue to cook as it cools down. If you leave it in for too long, the cake will be dry. Make sure you keep an eye on it while it cooks.
- Allow to cool slightly, then dig in!

Hi Yusie 🙂 I haven’t tried baking it in the oven, but I would suggest baking at 180C/160C fan/350F for 15 minutes first, then check to see if it needs more time.
