A quick, easy and delicious breakfast to start the day! 😋
I topped mine with some warm raspberries for extra nutrients, antioxidants and vitamins, but also with some ZENB Veggie Bites which are organic and a source of fibre!
ZENB is an organic, plant-based brand that strives to help people eat delicious on-the-go snacks, whilst also being respectful of the resources of our natural environment. The name ZENB is derived from the Japanese phrase “Zenbu” meaning “whole”.
ZENB has a delicious snack range inspired by vegetables. Their vegan bars, ZENB Veggie Sticks, are made up of vegetables, puffed brown rice, red quinoa and almonds to complement and enhance the simple flavour of the veggies. They’re available in 4 different flavours:
- Red pepper
ZENB Veggie Bites are also made up of vegetables with a blend of fruit, nuts and spices, to create a range of five unique flavour-pairings:
- Carrot, Pineapple and Coriander
- Pumpkin, Apple and Cacao Nib
- Beetroot, Orange and Cacao Nib
- Red Pepper, Tomato and Chilli
- Sweet Potato, Mango and Cinnamon
They come in perfectly portable resealable pouches, meaning they can be enjoyed throughout the day!
ZENB believes in including as much of the whole vegetable as possible, including the parts often discarded such as the peel, skin, stem and seeds, to help raise awareness around issues of food waste! Through the power of plants, ZENB strives to build a food lifestyle for the future.
Both the ZENB Veggie Sticks and Veggie Bites are perfect for on-the-go snacking, but they’re also ideal as toppings for things like porridge, overnight oats, smoothie bowls, soups, stews or even salads and pancakes. They’re a yummy and easy way to get veggie deliciousness and fibre into your daily diet.
All their products are plant-based, vegan, organic, gluten free, a source of fibre and are free from artificial flavours or preservatives!

Raspberry Overnight Oats
70g (2/3 cup) oats – use gluten-free oats if necessary
235ml (1 cup) plant milk of choice – I like to use semi-skimmed oat milk)
1 tbsp chia seeds
2 tbsp almond butter
1-2 tbsp maple syrup
1 tsp cinnamon
1 pack ZENB Veggie Bites – I used a mix of the Beetroot, Orange and Cacao Nib and Sweet Potato, Mango and Cinnamon
Mix all the ingredients together in a bowl/Tupperware, then cover and refrigerate overnight.
In the morning, add the raspberries to a heat-proof bowl and microwave for a couple of minutes to warm. Chop up the ZENB Veggie Bites and scatter on top. Enjoy!
