A quick, easy and delicious breakfast to start the day! ?

I topped mine with some warm raspberries for extra nutrients, antioxidants and vitamins, but also with some ZENB Veggie Bites which are organic and a source of fibre!

Raspberry Overnight Oats

Serves 2

Ingredients

70g (2/3 cup) oats – use gluten-free oats if necessary
235ml (1 cup) plant milk of choice – I like to use semi-skimmed oat milk)
1 tbsp chia seeds
2 tbsp almond butter
1-2 tbsp maple syrup
1 tsp cinnamon

Toppings

150g raspberries
1 pack ZENB Veggie Bites – I used a mix of the Beetroot, Orange and Cacao Nib and Sweet Potato, Mango and Cinnamon

Method

Mix all the ingredients together in a bowl/Tupperware, then cover and refrigerate overnight.
In the morning, add the raspberries to a heat-proof bowl and microwave for a couple of minutes to warm. Chop up the ZENB Veggie Bites and scatter on top. Enjoy!
