As some of you already know, I like keeping my recipes simple. To make this gluten free vegetarian spaghetti I’m making a simple tomato sauce using canned tomatoes and tomato puree and flavouring it with garlic, basil, chilli flakes and lemon jucie. I’m adding peas for some extra colour and texture but feel free to use minced meat or prawns for some protein.

Traditional Shepard’s pie can often be on the fatty, starchy side what with all the meat, thick layer of potato mash mixed with generous amounts of butter and cheese. This healthy vegetarian Shepherd’s pie is much lighter and full of vegetables and pulses packed with nutrients and mineral, and the best thing about it is that it tastes just as delicious and satisfying as the traditional!
