I love raspberries and peanut butter – the two gel so well together. Think PB&J, but grown up. Raspberry is often used in high-end jams, and peanut butter is its most iconic partner. Raspberries bring a natural tart-sweet brightness, while the peanut butter adds a salty, nutty richness. The acidity in raspberries also cuts through the dense, creamy texture of peanut butter perfectly.

By making my own chocolate bar, I can create a treat that is:

  • Lower in sugar (by choosing a chocolate bar lower in sugar and not using any added sugar).

  • Higher in fibre (thanks to the fresh raspberries)

  • Richer in healthy fats and protein (from the peanut butter).

  • Full of antioxidants, especially when using dark chocolate and fresh berries.

Peanut Butter – Natural peanut butter (the kind with just peanuts and maybe a pinch of salt) adds creamy texture, healthy fats, and a hit of plant-based protein. It also slows down the absorption of sugars, keeping your blood sugar more stable – perfect if you want a treat without the crash.

Can I customise my raspberry chocolate bar?

Of course!

Go crunchy – Add crushed peanuts or cacao nibs for extra texture.

Add a sprinkle of sea salt – It enhances the flavour and balances the richness.

Need more sweetness? We already mentioned PB&J, and if that’s the vibe you’re going for feel free to add a couple of dollops or raspberry jam for some extra sweetness, but also to intensify the raspberry flavour. 

Choose your chocolate wisely – Aim for ethically sourced dark chocolate 70% or above for the best taste. 

How to make this raspberry chocolate bar:

  • Arrange the raspberries in a chocolate mould, load tin or on a baking sheet lined with baking paper.
  • Drizzle the peanut butter on top, then cover with the melted dark chocolate.
  • Leave to chill in the fridge for a couple of hours, or until the chocolate it set.
  • Remove, slice and serve!
