Easy breakfast cookies with added protein and a source of fibre and healthy fats! These no-bake breakfast protein cookies are great as a light breakfast for busy days or even a healthier snack.

Made with a mixture of oats, almond butter, plant milk, vegan protein, cocoa powder and a little bit of maple syrup to sweeten.

I added chocolate chips, but you can leave them out or add things like cacao nibs, nuts or seeds instead!

They’re super easy to make and require no baking! They also make a yummy sweet treat/dessert. A must try!

 

No-Bake Breakfast Protein Cookies

Makes 12

Ingredients

125g smooth almond butter
3 tbsp plant milk
45g rolled oats (use gluten-free oats if necessary)
3 tbsp vegan vanilla protein powder
3 tbsp cocoa powder
3 tbsp maple syrup

Method

Mix all the ingredients in a bowl, then shape into balls and arrange on a baking sheet lined with baking paper. Press down into round cookies. Store in an air-tight container in the fridge for up to 5 days.
