Ingredients
 
 

  • 600g chicken breasts
  • 1 tbsp sun dried tomato oil or any cooking oil
  • 1/2 red onion finely chopped
  • 4 garlic cloves minced
  • 100g sun-dried tomatoes finely chopped
  • 1 tsp Italian herbs
  • 2 tsp paprika
  • 250g orzo
  • 2.5 cups chicken stock
  • 1 cup oat cream or double cream
  • 100g spinach chopped
  • Salt & pepper
  • Squeeze of lemon juice
  • 50g g grated parmesan cheese optional

Instructions
 

  • Heat 2 tbsp of sun-dried tomato oil in a large, deep skillet over medium heat. Sautee the onions for 5 minutes until softened, then add the chicken chunks. Cook until golden brown on all sides (about 5–7 minutes).
  • Stir in the garlic, Italian herbs, paprika and chopped sun-dried tomatoes and orzo. Cook for 1 minute until fragrant.
  • Pour in the chicken stock, bring to a gentle boil, then reduce heat to low. Cover and simmer for about 8–10 minutes, stirring occasionally to prevent the orzo from sticking, until the liquid is mostly absorbed and the orzo is tender.
  • Stir in the oat cream and spinach. Cover and continue cooking until the spinach wilts into the sauce.
  • Remove from heat. Add a squeeze of lemon juice to brighten the flavours and season with extra salt and pepper to taste. Add the grated pasmesan if using any serve.
