There’s something deeply satisfying about biting into a homemade treat that’s both nourishing and indulgent. These fruit and nut bars is covered in dark chocolate, striking that perfect balance between rich, chewy, and deeply flavourful, yet packed with natural goodness.
These bars aren’t just a sweet snack; they’re a powerhouse of nutrition disguised as dessert. Made with wholesome ingredients like Medjool dates, almonds, cashews, and peanuts, then coated in velvety dark chocolate, they’re proof that healthy eating doesn’t have to mean giving up decadence.

Soaking dates in brewed hot tea?
This step is completely optional, but I’ve taken it a step further and infused my dates in black tea. Dates are packed with nutrients such as potassium, magnesium, fibre, and natural sugars that provide a gentle, sustained source of energy.
When soaked in hot brewed black tea, they absorb its tannins and aromatic notes, creating a complex balance between sweetness and the slight bitterness of the tea.
Beyond flavour, black tea contains antioxidants such as theaflavins and thearubigins, which can support heart health and improve metabolism, while dates contribute antioxidants of their own along with natural minerals that replenish the body.

These homemade bars are incredibly versatile. They make an ideal on-the-go snack for busy mornings or afternoon slumps, providing sustained energy without the crash that comes from processed sweets.
They’re also a great pre or post-workout bite, offering a natural balance of carbs, protein, and healthy fats. Since they’re naturally gluten-free and can easily be made dairy-free with the right chocolate, they fit into a wide range of dietary preferences.

What you’ll need to make these fruit and nut bars:
Dates – I love using Palestinian Medjool dates as they have the best fudgy, soft texture and have just the right level of sweetness without being too sweet. Perfect for these fruit and nut bars.
Nuts – I used a combination of raw almonds, cashews and salted peanuts, but you can use any combination of nuts or seeds.
Dark Chocolate – 70% dark chocolate or above is best. The bitter notes add so much depth of flavour turning these date and nuts bars into a sophisticated bite size dessert.

How to make these fruit and nut bars:

Add the tea to a measuring jug and top with 500ml boiling water. Allow to brew for 5 minutes, then strain.

Add the dates to a heat-proof dish and top with the brewed tea. Allow to soak for 15-20 minutes, then drain.

Blend the nuts in a food processor, then add in the dates.Blend again until you have a mixture that holds well together when pressed between your fingers.

You can either press the mixture into a loaf tin then slice into bars, or set the mixture in round muffin moulds/moulds of choice.

Freeze until set, then slice into bars (if using a loaf tin)or remove from the moulds.

Break up the dark chocolate into a heat-proof bowl and melt in the microwave, giving it a stir every few seconds to ensure it doesn’t burn.

Fold in the chopped nuts if using any, then dip the nut bars to coat.

Arrange on a baking tray/chopping board lined with parchment paper and refrigerate until the chocolate is set.

If you drain the water, you shouldn’t add it fully to the nutritional value of the bars. The only way to keep these values is if the entire water content is kept without draining after soaking.
